Have you ever thought that what’s the biggest challenge for moms… It’s the habit of their kids to run away just at the sight of veggies. In that case, the healthy soups are cooked out of different seasonal veggies and they would definitely love them sipping with some crisp toasted bread slices
This easy-to-make soup is prepared in under 30 minutes and above all, it does not require sieving as the tomatoes have been peeled off before the cooking process begins

Ingredients

1- Tomatoes – 100 gms or 2 large ones
2- Broccoli – 100 gms or 1/4 of the flower
3- Carrot –  100 gms or 2 nos
4- Cabbage – 100 gms or 1/4 of the flower
5- Garlic – 4-5 cloves
6- Ginger – 1-inch piece
7- Butter – 1 tbsp
8- Water or vegetable stock – 2 cups
9- Salt – to taste
10- Crushed black pepper – 1 tsp or to taste

Instructions

1- Peel tomatoes and chop coarsely
2- Peel and cube carrots
3- Chop broccoli into small florets
4- Chop garlic ginger and cabbage
5- Heat butter in a pressure cooker and add ginger garlic
6- Saute for a while and add chopped veggies. Saute the veggies for a while. Avoid overcooking
7- Add water or veggie stock, salt- and crushed peppercorns and pressure cook for 2 minutes at medium flame or till 2 whistles
8- Open the lid and let the cooker cool down completely
9- Blend the mixture finely and the delicious vegetable soup is ready to serve piping hot
10- Sprinkle some crushed peppercorns on top just before serving
