Bajra /Millets Khichdi
Khichdi might not be the national dish of India, but it’s a much-loved preparation in the most indian households. A simple dish of rice, lentils and spices has become the comfort food of many. Every indian state has its own variation of khichdi.
These variations are a lot like bajra khichdi,jowar khichdi, chana dal khichdi and moong dal khichdi etc.You can modify it to your taste and diet.It’s a super food that each and everyone should be encouraged to eat this simple and rustic dish
A staple food, khichdi is one of the best combinations in the indian diet
One of the biggest plus point of khichdi that it is light on the stomach. If you are unwell, you are advised to eat khichdi. A combination of vegetables adds the fibres.Here I’m sharing the recipe of good old bajra khichdi which I have prepared with a few seasonal veggies
Preparation time – 20 minutes
Cooking time – 15 minutes
Course – main
Cuisine – Indian
INGREDIENTES –
Broken or khichdi rice – 1/2 cup
Moong-arhar dal mix – 1/2 cup
Bajra/ millet –  1/4 cup
Water – 5 cups
Finely chopped mixed vegetables (carrots, green peas, spring onions, bell peppers etc) – 1/2 cup
Ghee or oil – 1tbsp +1 tsp for topping
Cumin seeds – 1 tsp
Salt, pepper, red chilly powder, turmeric powder and asafoetida/heeng powder – 1 tsp each or tastewise
METHOD -:
1-  First of all Soak rice, lentils and bajra in water for minimum 20 minutes
2-  Heat ghee in a pan and add veggies to sauté them
3-  Add cumin seeds and heeng powder
4-  Add soaked ingredients and stir
5-  Add salt and other spices and mix well
6-  Add water and bring to one boil
7-  Cover the pan with the lid and let it boil to cook the khichdi.It will take 5 to 7 minutes to cook it
8-  Tasty and loaded with nutrition,bajra khichdi is ready to serve

6-  Tasty and loaded with nutrition, bajra khichdi is ready to serve. Add half a tsp of ghee while serving
