Cabbage Thoran or cabbage stir fry is an authentic recipe from kerala and prepared with any seasonal vegetable. In this recipe cabbage is stir fried along with shallots, shreaded coconut and
ginger. When prepared, a tadka/ tempering is added to this stir fry. The tempering of curry leaves, mustard seeds, whole red chillies and urad dal add a wonderful flavour to the dish. This stir fry is very light to eat as the cabbage is not overcooked and goes very well with rice, roti or dosai

INGREDIENTS REQUIRED
Cabbage – 500 gms.
Coconut ( shreaded) – 1/4 cup
Ginger – 1 inch piece
Shallots – 3-4 nos.
Oil – 2 tbsp
Salt,red chilly powder,garam masala powder – 2 tsp each or as per taste
Curry leaves – 1 small bunch
Whole red chillies – 3-4 nos.
Split/ White urad dal – 1 tsp
Mustard seeds- 1 tsp
METHOD -:
Chop the cabbage finely
Slice the shallots and ginger finely and add these to cabbage along with curry leaves
Heat oil in a pan and add mustard seeds.When crackle, add whole red chillies.
Add urad dal and let it fry.Finally add cabbage mix and stir.
Add salt and powdered spices and stir fry the vegetable a little bit soft. No need to cover this with the lid, as this will make the dish soggy
Tasty stir fry cabbage or cabbage Thoran is ready to eat with rice or dosas
