Cabbage Thoran or Cabbage Stir Fry

Cabbage Thoran is an authentic recipe from Kerala.This is very simple recipe which does not much time to cook
In this recipe, cabbage is stir-fried along with shallots, shredded coconut and
ginger.A tadka of mustard seeds,curry leaves and whole red chilly  is added to this stir-fry.Wheneve I want a change
In regular cabage-pea recipe,I cook this version and everyone in the family relishes it.Here is the recipe..

Servings – 4
Cuisine    Indian – Kerala
Cabbage – 500 gms.
Coconut ( shredded) – 1/4 cup
Ginger – 1-inch piece
Shallots – 3-4 nos.
Oil – 2 tbsp
Salt, red chilly powder,garam masala powder – 2 tsp or as per taste
Curry leaves – 1 small bunch
Whole red chillies – 3-4 nos.
White urad dal – 1 tsp
Mustard leaves – 1 tsp
Chop the cabbage finely
Slice the shallots and ginger finely and add these to cabbage along with curry leaves and shredded coconut
Heat oil in a pan and add mustard seeds.When crackle, add whole red chillies.
Add urad dal and let it fry.Finally, add cabbage mix and stir.
Add salt and powdered spices and stir-fry the vegetables until it becomes a little bit soft.Don’t cover with lid.
Add remaining coconut as a garnish and tasty stir-fry cabbage or thoran is ready to eat.
