This Corn-Mango Salsa is a mix of rainbow-hued veggies + mangoes + corn kernels and the buttery corncobs. This salad will remind you of the Mexican Salsa for the key ingredients I have used to prepare this

This healthy salad is one of the best appetizers, I have ever prepared. The salsa has all the flavours to satisfy your taste buds. Riped mangoes add a sweet taste to it. Though corns too are sweet so I have added red chilly powder while steaming and tempering it. In this way, the corncob has chilly butter flavours to attain the heat. Tangy pickled onions are flavoured with 2 peppers and cinnamon to give a kick to the salad. On the whole, this corn-mango salsa is a complete package of contrasts of colours, taste and flavours. INGREDIENTS REQUIRED FOR STEAMED CORN COBB

• Corn cobbs – 2 nos
• Water – As required to submerge the cobbs
• Salt – 1 tsp
• Red chilly powder – 1/2 tsp+ more half tsp for tempering
• Turmeric powder – 1/2 tsp
• Butter – 1 tsp

INGREDIENTS REQUIRED FOR PICKLED ONIONS

• Thinly sliced onions – 1 cup
• White vinegar – 1/2 cup
• Salt – 1 tsp
• Red chilly powder – 1/2 tsp
• Black pepper-corns – 4-5
• Cinnamon stick – 1 small

INGREDIENTS REQUIRED FOR CORN-MANGO SALSA

• Corn kernels – 2 cups
• Corn cobb (steamed) – 1-2 nos
• Diced cucumber – 1 cup
• Diced tomatoes – 1 cup
• Pickled onion slices – 1 cup
• Diced mango – 1 cup
• Salt – 1 tsp
• Black pepper powder – 1 tsp
• Lemon juice – 3-4 tsp of juice from 1 lemon

HOW TO MAKE BUTTERY n ‘STEAMED CORN COB


Add water, corncobs, turmeric powder and red chilly powder to a cooker and give steam for 5 minutes or until they get soft

When done, keep aside and heat butter in a pan. Add 1/2 tsp red chilly powder. Pour this chilly butter over corn cobb. Add lemon juice and cut into desired pieces. Your buttery corncobs are ready to add to the salsa

STEPS FOR PICKLED ONIONS

Take a glass or ceramic bowl
Add all the ingredients written under pickled onions to it. Mix well and
Keep aside for 30 minutes so onions get all the flavours

STEP BY STEP FOR PREPARING CORN-MANGO SALSA

Steam the corn kernels for 5 minutes and allow them to cool completely

When cooled, take a serving tray or a broad bowl and add all the diced veggies and mango. Also, add steamed n buttery corncob pieces and steamed corn kernels

Add salt, pepper powder, lemon juice and fresh coriander leaves just before serving
