Fudgy Brownie Cupcakes

These walnut brownie cupcakes are moist and amazingly tasty and above all, easy to make cakes. These are quick to bake, eggless b’cause made with malai (milk fat) as a base
Malai or milk fat is obtained after boiling and then refrigerating the milk for hours and there is a thick layer of milk fat on the top. Collect this and make the best use of it to bake delicious chocolate cupcakes

Sometimes I find it quite boring to use this malai for extracting butter and then ghee(clarified butter) but this time when I  made these utterly delicious chocolate muffins out of malai for the first time, I have become the fan of this recipe.
Bits of walnuts add the crunch to it. I don’t think there can be a particular time of the day to have this dessert. In fact, these might be enjoyed any time of the day
Just whip up the malai/fresh cream/milk fat with sugar,  add melted chocolate and little flour and see what comes up.. Vollah !! These melt-in -mouth fudgy beauties

Ingredients

1- Malai/fresh cream/milk fat – 150 gms
2- Powdered sugar – 150 gms
3- Semi-dark chocolate 55%cocoa – 80 gms
4- All-purpose flour – 100 gms
5- Chopped walnuts – 100 gms +some more for  garnish
6-  Butter – 50 gms
7- Cocoa powder – 50 gms or 2 tbsp
8- Coffee powder – 1 tsp

 Instructions

1- In a microwave safe bowl, add butter, chocolate, cocoa powder and coffee powder and microwave for 1 minute. Be careful to stir after the small interval of time (firstly for 20 seconds Thereafter for 30 seconds and finally for 10 seconds)
•  A double boiler can be used to melt the chocolate. For this the chocolate bowl is kept over another bowl of boiling water and the chocolate is melted due to heat. A continues stiring is needed during the process. Once the chocolate starts melting, remove the bowl and keep stiring the chocolate.
2- Whisk malai/ milk fat with powdered sugar so well that the sugar is incorporated into the malai

3- Add butter chocolate mix to whisked malai and whisk again. Add chopped nuts at this stage and mix well

4- Add the flour and mix gently
5- Pour this batter into the cupcake moulds up to 3/4 of their height and place 1walnut kernel over the top
6- Bake the cupcakes for 25 minutes at 180°C. Give them a rest of 5 minutes in the oven and finally place them on a wire rack
7- Yummy chocolate cupcakes with malai are ready to enjoy
