Gajar Ka Halwa

A delicate aroma is common from the Indian kitchens during the winter season. This divine aroma comes out from the milk simmering with grated carrots. Can you imagine your life without this creamy, melt in mouth classic desser! A halwa, made from fresh juicy red carrots is favourite of all age groups. We all have been growing up eating this traditional Indian dessert

There are several methods of cooking this traditional Indian dessert. The most authentic and rustic way to cook it with milk and carrots simmering together for hours. Some make it with khoya or mava whereas some cook it by adding condensed milk. I make this delicious halwa with malai(milk fat)  and milk. As malai always rests in my fridge and I use it in some of the other dishes. This easy carrot halwa is prepared in the pressure cooker which takes less time to come out

Ingredients

    • Red carrots(grated) – 700 gms
    • Milk – 1 cup – 200 ml
    • Malai/milk fat – half cup – 100 gms
    • Ilayachi/green cardamon powder – 1 tsp
    • Sugar – 100 gms or to taste

 Instructions

1- Add grated carrots, milk, malai and sugar to a pressure cooker and close the lid. Keep it at low medium flame and let it cook for 10 minutes.

2- Switch off the flame and let the cooker cool down completely. Open the lid. Most of the milk must have absorbed and carrots are softened now

3- Keep the cooker again on high flame now without the lid. This is the time to stir continuously until all the milk is absorbed completely. Add ilayachi/cardamom powder and mix

4- All the liquid will be absorbed completely in 10 minutes and this is the time to prepare for tadka.

5- Heat ghee in a pan and add chopped nuts. Roast them until they change colour to light golden

6- Pour this tadka over prepared halwa and mix well. Serve this delicious halwa piping hot
