GHIYA KOFTA/LOUKI KE KOFTE /Bottle Gourd KOFTA CURRY /घीये के कोफ्ते

Louki or bottle gourd kofta curry is a homely yet tasty curry which is prepared with this summer gourd. Due to numerous health benefits, this vegetable is much loved and the most consumed one in the season. So many dishes are prepared with this gourd. This cooks tasty curries when paired with lentils like  GHIYA-CHANA DAL CURRY and GHIYA-KALA CHANA CURRY and  many more
This ghiya kofta curry preparation has two parts. One is to deep fry the ghiya koftas. These koftas are prepared with the combination of grated louki, besan, some aromatics and a few regular spices. The other part is to cook the onion-tomato based gravy. The fried koftas or louki balls are dunked into the flavoursome curry to make such an amazing dish

INGREDIENTS REQUIRED FOR KOFTA/ FRITTERS

• Louki/ghiya/bottle gourd – 1 no(500 gms)
• Besan/gram flour – 3 tbsp
• Salt – 1 tsp
• Red chilly powder – 1 tsp
• Haldi/turmeric powder – 1/2 tsp
• Roasted cumin powder – 1 tap
• Whole cumin/jeera – 1 tsp
• Saunf/fennel seeds – 1 tsp
• Finely chopped ginger – 1 tsp
• Finely chopped green chillies – 1 tsp
• Oil for deep frying – Sufficient enough

INGREDIENTS FOR LOUKI KOFTA CURRY

•  Onion paste – 1/2 cup(from 2 large onions)
•  Tomato puree – 1/2 cup (from 2 large tomatoes)
•  Salt – 1 tsp/to taste
•  Degi mirch powder(Kashmiri red chilly powder) – 11/2 tsp
•  Coriander powder – 1 tsp
•  Garam masala – 1 tsp
•  Oil – 2 tbsp
•  Coriander leaves for garnish

METHOD FOR LOUKI KOFTE/ FRITTERS
1- Peel ghiya and grate with the help of a grater

2- When grated, squeeze extra water with the help of muslin cloth ( not all the water to be removed)

3- Take a mixing bowl and add all the ingredients except oil

4- Combine well with the hand or a spoon(no need to add water as the louki still has some moisture)

5- Keep at rest for 5 minutes and make balls of walnut size. Whilst, heat oil in a kadahi to medium-high temperature (check the temperature by dropping little batter)

6- Drop the louki balls into the hot oil and deep fry until golden. When done, keep aside to use later

METHOD FOR LOUKI KOFTA CURRY

1- Heat oil in a saucepan and add jeera/cumin. When it starts to crackle, add all the powdered spices except garam masala. Roast(bhunow) for a few seconds, add onion paste

2- When onion paste is cooked to light brown, add tomato puree. Now add salt and mix

3- Cook/bhunow this masala at low flame until it releases oil from sides

4- Now add 2 cups of water and allow the gravy to boil. Cover the pan with a lid

5- When the gravy is cooked, add kofta fritters and boil the gravy for more 5 minutes. Finally add garam masala and coriander leaves. Switch off the flame and serve the tasty ghiya kofta curry with roti or rice
