Moong Dal Chaat

This is a very interesting preparation with green moong dal or whole moong dal from the Punjab region. This variation is cooked dry, which means all the liquid is allowed to evaporate while cooking and the main thing is that it should neither be al dente nor mushy after cooking.
A simple tadka or tempering of cumin seeds and asafoetida is prepared and then soaked dal is added to it. It is then cooked at a very low flame until all the water is evaporated. When it is prepared, enjoyed as a chatpati dal chaat with onion, tomatoes, and lemon juice. This cooked dal is also used as stuffing for pooris or paranthas to make cooked moong dal ki stuffed pooris
