You must have relished chutneys with raw mango but have you ever tried our favourite side dish with a semi-ripe mango which is neither too sweet nor too tangy. There is quite a big range of ingredients which make a perfect pair with a semi-ripe mango. Mint or pudina is one of them. One more is coconut/nariyal which makes Mango-Coconut Chutney

INGREDIENTS REQUIRED

• Semi ripe mango (not too sweet) – 1 no
• Mint leaves – 1 cup or leaves from1 big bunch
• Green chillies – 1-2 or to taste
• Juice from 1 lemon
• Salt – 1/2 tsp or to taste

INGREDIENTS FOR TEMPERING/TADKA

• Mustard oil – 1 tsp
• Cumin seeds/jeera – 1/2 tsp
• Whole red chillies – 1-2 nos

STEP BY STEP

1- Firstly add mint leaves and green chillies to a blender and blend to a coarse paste. Keep aside

  • You can make a paste with the help of pestle and mortar/sil batta (making the paste on sil batta keeps the mint leaves fresh and green)

2- Take a pan and add mustard oil and heat to the smoking point. Now switch off the flame and add cumin seeds/jeera and red chillies. Stir them well

3- Switch on the flame again and add chopped mangoes.

4- Allow them to cook for 2-3 minutes Stir them well and mash a little with the spoon. Add salt at this stage and mix well

5- Switch off the flame and let the mango cool down completely. When cooled, add the mint paste and lemon juice. Mix well everything to make a mint-mango chutney

6- This chutney goes well with cutlets and kababs. I serve this chutney with BHUTTE-AAM KE KABAB/ CORN-RAW MANGO KABAB
