Raw Mango Rice (Andhra Style)

Whenever this rice dish is cooked in my kitchen, the aroma of south Indian tadka boosts up the appetite of everyone in my family. Though rice dishes are not a staple food in my family as bread, roti or paranthas, I like to cook rice in one way or another. Sometimes I cook rice adding veggies to make veg pulao or fried rice. Green bean rice and berry n’ nuts pulao are the favourites of my family. I love to add raw mangoes and shredded coconut to this versatile grain to give it a tangy-sweet flavour. My family loves to eat this flavoursome rice dish with mixed veg sambhar and chutneys

With the arrival of mangoes, several dishes are added to our day to day menu in which I can use this wonderful fruit mango whether raw or ripe. One such dish is raw mango rice. This rice dish is Andhra style and called mangai sadam there. This mildly spiced rice dish has a tanginess from raw mango and a sweetness that comes from shredded coconut. Leftover rice or simple steamed rice can be used as a base for this flavoursome dish

Ingredients

Rice (washed and soaked) – 1 cup

 Water 6-7 cups

Salt – 1 tsp

Ingredients for Tadka

Any cooking oil – 2 tbsp (i used coconut oil)

curry leaves – 8-10

chana dal and split urad dal – 1 tsp each

Mustard and cumin seeds – 1 tsp each

salt – 2 tsp

Whole red chillies – 2-3

Grated raw mangoes – 3 tbsps or a half cup

Grated fresh coconut – 3 tbsp or a half cup

Raw peanuts – 3 tbsp or a half cup

Instructions

1-  add rice, water and some salt to a heavy bottom pan and keep for boiling at high flame

2-  After one boil slow down the flame and cook rice until they reach the right consistency

3-  When cooked drain the extra water through a strainer and keep the rice aside to prepare for tadka

4-  For tadka heat oil in a kadhai and add mustard and cumin seeds to splutter

5-  Next, add chana and urad dal and fry them. Time to add curry leaves and whole red chillies. Now add peanuts and fry them until brown

6-  Time to add grated raw mango and coconut shreds. Stir well and add salt

7-  Now add cooked rice and mix everything to incorporate all the flavours

8-  Serve this flavoursome rice dish with chutneys and sambhar
