 often we end up with leftovers, which duly get stowed into the fridge and forgotten! These crisp n tasty cutlets are the best to transform your leftover food. I often call them leftover ka makeover cutlets!! An addition of semolina and crushed peanuts make them crispier.

Ingredients

  1.  Cooked rice – 1 cup
  2. Fine sooji or semolina – 1/2 cup
  3. Finely chopped onions – 2 tbsp
  4. Raw peanuts – 1/4 cup
  5. Chopped coriander leaves – 2 tbsp
  6. Salt – to taste or 1 tsp
  7. Red chili powder and turmeric powder – 1 tsp each
  8. Amchur /dry mango powder – 1 tsp
  9. Chaat masala – 1 tsp

 Instructions

1 – Firstly, fry peanuts till light brown and keep aside to cool
When cooled, grind them to a coarse powder
2 – In the same grinder, grind coarsely the cooked rice with 2 tsp water and keep aside
3 – Take a bowl and mix everything except oil, to make a dough
4 – Divide the dough into equal portions and shape them into cutlets and refrigerate them to set for 10 minutes
5 – Heat oil at a high flame in a kadahi and deep fry each cutlet to golden and crisp
6 – Serve this amazing snack with chutney as an evening snack
