Scotch Eggs An Eggy Addiction

If you are an egg lover this snack is for you. When You cut this crisp n crunchy deep-fried ball a surprise comes to you in the form of an eggy center and you fall in love with this scrumptious and amazingly tasty dish
A fritter with a crisp outer layer and soft eggy center inside is an ultimate delight. You don’t want to stop after one and need more!! 😊
There are many versions to prepare this dish. Meat lovers make this with minced meat as an outer layer. I have made this with leftover cooked veggie rice. For this dish eggs are boiled and peeled and stuffed into a rice patty. This is then rolled into a beaten egg followed by coating with bread crumbs before deep frying

Ingredients

1- Cooked rice – 2 cups
2- Hard boiled eggs – 2 nos
3- Beaten egg – 1 no.
4- Bread crumbs – 2 cups
5- Salt, pepper, red chilly powder – 1 tsp each for rice + 1 tsp for beaten egg
6- Fresh coriander – 2 tbsp(chopped)
7- Chopped onions – 2 tbsp
8- Sufficient oil for frying

 Instructions

1- First of all peel off the boiled eggs and keep them aside. Beat 2 eggs and add 1 tsp salt and spices to it
2- Add chopped onions, coriander, salt, and spices into cooked rice and mash and knead  everything well
3- Spread some rice mix on hand and flatten like a patty
4- Place one egg on it and cover this well to make a ball.
5- Shape this ball with both hands. Make all these balls and refrigerate them for 10 minutes to set
6-  Roll this ball into beaten eggs followed by  bread crumbs
7- Heat oil at high flame and fry each ball until golden brown
8- Serve this amazing snack with tomato ketchup and some salad
