SEVIYAN KHEER/A GLORIOUS MILK PUDDING WITH VERMICELLI/सेवियों की खीर

Seviyan/Vermicelli kheer or seviyan ki kheer doesn’t require any occasion to cook. This amazing pudding can be enjoyed at any time whenever you crave for something sweet. Even at breakfast, this is so filling and healthy. This heavenly tasty yet easy to make kheer requires a few ingredients. To make this sweet dish, the wheat vermicelli is required which are already dry roasted. The milk gets thickens while simmering and tastes rich with the goodness of roasted seviyan and nuts in ghee.


This glorious milk pudding is loved by all age groups. Generally, a large variety of kheer is prepared along the whole extent of India with different ingredients from grains and lentils to the nuts and fresh fruits. Good food along with many amazing desserts like kheers or payasam simply defines celebrations and festivities in India

INGREDIENTS REQUIRED

• Roasted wheat Seviyan/Vermicelli- 1 cup(150 gms)
• Full fat milk – 1 lt
•  Sugar – 100 gms/to taste
•  Ghee – 1 tbsp
• Cardamom/Ilaychi powder – 1/2 tsp
•  Mixed nuts(almond, cashews, raisins)

DIRECTIONS

1- Heat ghee in a kadahi/non-stick pan and add mixed nuts. Fry them at low flame until they get golden. Now take out to use later

2- In the same pan with remaining ghee add seviyan/Vermicelli. Roast them at low flame stirring continuously

3- Next, add milk and allow to boil at medium flame firstly and then simmer at low flame. Add cardamom powder at this stage

4- When the milk is reduced to half, add sugar and cook until it thickens and reaches a kheer consistency.

5- Add fried nuts and serve the yummy seviyan kheer hot or at the room temperature

NOTES

Sugar can be replaced with jaggery/gur for a healthier version. Jaggery should be added when the pudding is just to finish. Adding jaggery at the earlier stage results in curdling of milk
