Instant Sooji Handvo,  a Gujrati delicacy is a savoury cake prepared with rawa, curd and seasonal veggies. This dish is a part of their day to day menu which is eaten for breakfast or as an evening snack. This savoury cake is so nutritious and filling that you don’t feel hungry for hours

There are numerous methods to prepare this healthy dish. The authentic dish is prepared with overnight soaked and fermented rice and lentils. Instant handvo is prepared with Rava and curd and raised by adding baking soda. This cake can be baked, steamed or slow-cooked in a nonstick pan to perfection

Ingredients For Handvo

•  Curd/ Dahi- 1 cup

•  Semolina/ sooji – 1 cup

•  Besan/gram flour – 1 tbsp

•  Finely chopped veggies(onion, carrot, beans,  grated gourd or zucchini etc.) – 1 cup

•  Salt – 1 tsp/to taste

•  Red chilly powder – 1 tsp

•  Turmeric/Haldi – 1 tsp

•  Baking soda – 1 tsp


Ingredients for tempering/tadka


•  Cooking oil – 1 tbsp

•  Mustard seed – 1 tsp

•  Cumin seeds – 1 tsp

•  White sesame/safed til – 2 tsp

•  Chopped ginger and green chillies – 1 tsp each

•  Asofotida/heeng powder – 1 tsp

•  Curry leaves or Coriander Leaves – 10-12

Method for tadka/tempering


1-  Heat oil and add mustard, cumin seeds and add ginger, green chillies and curry leaves. When crackle, switch off the flame and keep aside


STEP BY STEP
1-  Whisk curd/dahi and add semolina/soojiAdd veggies, salt and powdered spices and baking soda. Mix it well with a spatula

2-  Pour this mix into a greased baking mould. Pour tadka over the mix and bake handvo for 25-30 minutes at 180°C in a preheated oven

3-  When baked allow it to cool so that it comes out clean from the mould

4-  Cut slices and serve with raw mango coriander chutney
