Cutlets are delectable snacks which are prepared by combining various veggies to add some binding agent. These are soft inside but crisp and crunchy outside. This crunch comes by deep frying or shallow frying them. Potatoes are the key ingredients to any type of cutlets. They act as a binding agent too. Not only this if they are not deep fried, are a healthier option to get a no of nutrients. I have added sweet potato to these cutlets with potatoes and a few aromatics. Sama flour is added to bind them instead of cornflour. This flour is non-starchy and gluten-free. These cutlets provide you with a good option to consume in upvas/fasting or vrat days

WHY SHOULD I ADD SWEET POTATOES TO MY DIET

Sweet potatoes are considered SuperFood these days. This wonder ingredient is a starchy root vegetable that is rich in fibre, vitamins, and minerals. They’re also high in antioxidants that protect your body from free radical damage and chronic disease.

INGREDIENTS

•  Boiled Sweet Potatoes(medium-sized) – 4-5 nos

•  Boiled Potatoes (medium-sized) – 1-2 nos

•  Sama/Samak atta/flour – 2 tbsp

•  Sendha namak/salt – 2 tsp or taste-wise

•  Red chilly powder – 1 tsp or tastewise

•  Roasted peanuts(crushed)  – 1 tbsp

•  Fresh coriander(finely chopped) – 1 tbsp

•  Finely chopped green chillies – 1 tsp

•  Oil for pan frying – 1-2 tbsp

INSTRUCTIONS
1
–  Boil and peel both potatoes and sweet potatoes and mash with hands or a potato masher


2-  Take a broad bowl and add all the ingredients except oil


3-  Mix with hands so that everything is incorporated well to make a dough

4-  Take 1 tbsp dough at a time and roll to make walnut-sized balls. Flaten each in between palms by pressing lightly


5-  When all are shaped, refrigerate them for 10 minutes to set
6- Heat oil to low-medium in a frying pan and pan-fry each cutlet until they get a golden brown colour on both sides

7-  Serve these yummy cutlets with coriander chutney without onion
