Dates and carrots go very well with each other and make the best pairing in the culinary world.These muffins are eggless and curd is used in place of them.These are very healthy and tasty muffins which can be a good option for breakfast.Both the ingredients provide essential vitamins and minerals.Little sugar is added as dates provide natural sweetness to them.
I have used oatmeal in place of refind flour.Plain oats are dry roasted and ground to flour. Add of cinnamon powder take them to another level. These muffins can be a good option for breakfast

servings – 8
INGREDIENTS  FOR 6 MUFFINS
Oatmeal – 1 cup or 125 gms
Olive oil or any other odourless oil – 1/4 cup or 30 ml.
Finely chopped Dates – 1/2 cup
Powdered sugar – 30 gms.
Grated carrots – 1/2 cup
Thick curd – 1 cup
Baking powder – 1 teaspoon
Baking soda – 1/4 teaspoon
Cinnamon powder – 1 teaspoon
METHOD -:
 
-Sift oatmeal, baking powder and soda 2 times and keep aside
Whisk butter and sugar until fluffy
Add thick curd and whisk well
Add dates and carrots and mix
Add sifted oatmeal and fold gently
Divide this batter into muffin moulds and bake at 180℃ for 30 minutes in a preheated oven
Open the oven and keep them on a wire rack to cool completely
