Egg Masala Curry

Egg masala curry is an all-time favourite dish in my family. It is the most comforting food which does not take too much time to prepare.T though I call it egg masala, yet not spicy as I use a few whole spices which make it flavoursome n aromatic. People who do not eat non-vegetarian food but eggs,  like this dish a lot

This curry can be enjoyed with roti or rice but I serve this with spinach-bread which I often bake at home. Everyone likes this combo in my family. I specially bake a spinach bread whenever I plan to cook egg masala
Preparation – 10 minutes
Cooking time – 30 minutes
Ready in 40 minutes
Servings – 4
1- Hard-boiled eggs – 4 nos
2- Coarsely chopped onions – 1 cup
3- Coarsely chopped tomatoes – 1 and a half cup
4- Ginger – 1-inch piece
5- Garlic cloves – 5-6 nos.
6- Salt – to taste
7- Turmeric powder, coriander powder, garam masala powder, red chilly powder – 2 teaspoons each
8- Bay leaves – 1 no.
9- Green cardamom, cloves, whole black pepper – 3-4 each
10- Oil – 3 tbsp
11- Water – sufficient for gravy
METHOD -:
1- First of all, keep the eggs for boiling for 10 minutes
2- In the meantime start preparing for the curry
3- Heat oil in a kadahi or pan and add whole spices
4- Add garlic and ginger and stir
5- Add onions and cook until golden brown
6- Add tomatoes and cook until they become soft
7- Add salt and powdered spices and add little water
8- Cook masala until it leaves oil
9- Switch off the gas and let it cool
10- In the meantime peel the eggs and cut each into half
11- When masala is cooked take out bay leaves and blend to make a fine paste
12- Transfer this paste to the pan and add sufficient water and bring it to one boil
13- Add eggs and give 2-3 boils.Switch off the gas and serve this yummy curry with roti, bread or rice

First of all, keep the eggs for boiling for 10 minutes
In the meantime start preparing for the curry
Heat oil in a kadahi or pan and add whole spices
Add garlic and ginger and saute

Add onions and cook until golden brown

Add tomatoes and cook until they become soft

Add salt and powdered spices and add little water
Cook masala until it leaves oil. Switch off the gas and let it cool
In the meantime remove the shell of the eggs and cut each into half

When masala is cooked take out bay leaves and blend to make a fine paste

Add this paste to the pan and add sufficient water and bring it to one boil

Add eggs and give 2-3 boils. Switch off the gas and serve this yummy curry with roti, bread or rice. I love to have this egg curry with homemade SPINACH BREAD
