
Soya Malai Chaap / सोया मलाई चाप/ अफगानी सोया चाप
Dishes with soy have gained huge popularity for the past few years. Soya milk, soy paneer or tofu, soy chunks or soy chops are few of them. Undoubtedly, packed with protein, soy products are healthier and gaining popularity as vegan meat nowadays

You can make yummy dishes at home with soy chops by pan-frying or grilling or with gravy. Today’s preparation with soy chops is of dry consistency or latpati type. This dish is onion free and a wonderful masala is prepared with coconut and cashew nuts. Whole red chilly is used to give a kick to this mildly spiced dish

INGREDIENTS FOR MARINATION
• Soya Chaap – 500 gms/7-8 nos
• Dahi/curd – 1 cup
• Cream/Malai – 1 tbsp
• Salt – 1 tsp
• Ginger-Green chilly paste – 1 tbsp
INGREDIENTS FOR FINAL DISH
• Oil – 2-3 tbsp
• Grated coconut – 1 cup
• Cashew whole or broken – 1/2 cup( soaked in milk for half an hour)
• Salt – 1 tsp or to taste
• White pepper – 2 tsp
• Whole red chillies – 3-4
• Cumin/jeera – 2 tsp
INSTRUCTIONS FOR MARINATION
Take a bowl and add dahi, malai/cream, salt, half quantity ginger and garlic paste and whisk well. Rinse Soy chops with water and give a few cuts with a sharp knife

Add dahi to chaap or chops and coat and massage well with the marination. Keep refrigerated for 30 minutes

INSTRUCTION FOR FINAL DISH
Make a paste of grated coconut and soaked kaju/cashew nuts and keep aside

Take a nonstick pan and marinated soy chaaps and pan fry both sides until light golden colour

Take them out and keep aside. In the same pan add ginger-green chilli paste, cumin seeds/jeera. allow them to crackle. Now add whole red chillies

Add coconut-cashew paste and roast/bhunowing/भूनो until it leaves the pan

Time to add water for gravy and give 1 boil.

Add fried soya chops/chaaps and cover the pan with a lid

Let the gravy simmer at low flame for 15 minutes

- Add more hot water according to your need for gravy. Though this dish tastes batter with a thick masala or latpati gravy
Finish the dish with kasoori methi and white pepper. Mix well.

Switch off the flame and serve the yummy soya malai chaap or chops with roti or parantha
