This simple, delicious and satisfying soup is a comfort food for me. I call it the wonder soup as preparation is very easy with two main ingredients only. Both the main ingredients tomatoes and spring onions make its flavour more palatable. This low in calories soup fills your stomach and suppresses hunger pangs for a longer duration. So, ideal for those who are weight watchers, so this soup comes out as a winner for its fat-fighting property

I use spring onions/green onions in this soup in place of regular red onions as they add a bit of texture, colour, and a milder taste to your cooking than regular onions. Regular onions have a pungent, strong smell which overpowers the tomatoes. Spring or green onions have lots of fibre and are a great source of vitamin A and K, sulphur, phosphorus and iron. And the tomatoes undoubtedly a miracle fruit, the rich source of antioxidants, perks up the flavour of this soup

 Ingredients

 Tomatoes(washed and chopped in cubes) – 500 gms

 Spring/Green onions (washed and chopped with greens) – 250 gms

 Garlic cloves – 4-5 nos

 Star anise spice – 1-2 nos

 Water/vegetable stock – 4 cups

Salt and black pepper powder – 2 tsp each or to taste

Butter – 1 tbsp

 Instructions

Heat  butter in a pan and add star anise spice followed by garlic cloves and green onions
Sauté them for a few minutes and add chopped tomatoes
Cook tomatoes to the softer consistency then add  salt, black pepper powder and water
After a few boils switch off the flame and let the soup cool down to blend into a puree
Strain the purée to get a smooth and silky soup
Serve hot with a garnish of some greens of onion
