CHOCOLATE AND ORANGE FLAVORED MUFFINS/ORANGE INFUSED CHOCOLATE MUFFINS

Chocolate and Oranges are a pair made in heaven in the culinary world. The taste of chocolate becomes magical with oranges.  I wanted to make an extraordinary bake(cake or muffins)this Christmas, so I went for this combination and surprisingly, I didn’t regret after these beautifully baked orange- chocolate muffins came out of the oven

I have baked plum cakes several times by infusing dried fruits in orange juice, and they all have been superb. But these chocolate cupcakes, with dried oranges, orange juice, and, last but not least, orange candied peels on top, did magic, making the muffins extraordinary and tasty.

This week, while planning to buy goodies for Christmas, I got a chance to get dried oranges and it was the best buy. As soon as I got them, I planned to pair them with dark chocolate in a cake or cupcakes.  I soaked them in orange juice with other dried fruits and berries so that they could absorb the flavors. I always have homemade candied orange peels in my pantry, and this time they were going to play their best part. Candied peels on the top of each muffin as a crown, played their best role in making the muffins  truly yummy

Prep Time  – 12 hrs. (prep time requires soaking of dried fruits)
Baking Time – 40-45 minutes at 170 degrees

●  INGREDIENTS REQUIRED

• Butter – 150 g
• Brown sugar  – 125 g
• Eggs – 3 nos.
• All purpose flour  – 1 cup(210 g)
• Baking powder (heaped)  – 1 tsp
• Baking soda – 1/2 tsp
• Orange juice – 100ml+ 50 ml•
• Assorted dried fruits (oranges, berries, nuts)
Candied Orange Peels – 12-15 nos.
• Dark chocolate  – 100 g

●  PREPARATIONS TO BE DONE
1 – Soak dried orange and other fruits in 150 ml orange juice overnight

2 – Line the muffin tray with paper molds and grease them with a brush, so that muffins come out easily after they are baked

3 – Melt chocolate in a double boiler at low flame or in a microwave stirring at intervals(I like to melt chocolate in a double boiler)

4 – Sift together flour, baking powder,  and soda. Keep it aside

●  WALK THROUGH

1- To start with, melt 150 g butter in a pan at low flame

2- Add brown sugar to butter and whisk until it becomes light and fluffy

3- Add melted chocolate and whisk all together

4- Add 50 ml orange juice and combine with chocolate mix

5- Add one egg at times and whisk gently (plz don’t whisk vigorously)

6- Add flour in batches and fold gently to make a batter

7- Add orange juice juice infused fruits and nuts and combine them with the batter

8- Drop an equal quantity of batter into each muffin mold. * Fill 3/4th batter in each mold. Two numbers of muffin trays were ready to bake(12 muffins)

9- Place a candied orange peel on top and shift the muffin trays in oven. Bake the muffins at 170° for 40-45 minutes or until the toothpick comes out clean

10- When muffins are baked to perfection,  place them on wire rack to cool down completely

11- Superbly yummy orange infused chocolate muffins are here to enjoy
