A crazy combination which can never go wrong. Cupcakes are loaded with citrus flavour, both orange juice and the marmalade which comes out as a surprise when you dig into the layers one after the other. Orange marmalade is used as a filling in muffins making a cavity on top of each. And finally, the whipping cream-butter frosting with delicious cherry puree is quite enough to make you an addict of these amazing cupcakes.
Ingredients required for 6 cup cakes – :
• Cake flour – 1 cup/ 150 gms
• Powdered sugar – 3/4 cup/ 120 gms approx.
• Melted butter – 3/4 cup /120 gms
• Eggs – 2 large
• Fresh orange juice – 2 tbsp
• Baking powder – 1 teaspoon
• Baking soda – 1/2 teaspoon
• Salt – a pinch
Ingredients for filling
• Orange Marmaled – 2-3 tbsp
ingredients for Cherry puree
• Fresh, canned or frozen red cherries – 12-15 nos
• Sugar – 1/2 cup
Ingredients for frosting :-
• Whipping cream – 100 ml
• Butter at room temperature – 50 ml
• Cherry puree – 1/2 cup
• Powdered sugar – 100 gms
• Few cherries and orange candy for decoration
Method for Cherry Puree
1- Deseed cherries and chop them
2- Take a saucepan and add cherries and sugar
3- Bring to boil at low-medium flame stirring at intervals. Firstly the mix will be liquidy but after 10 minutes the cherry puree will thicken.
4- Switch off the flame and strain it to get a fine puree. Allow it to cool completely. Refrigerate to chill to add to frosting
Method for Cupcakes -:
1- Add sugar to butter and beat well until it get the creamy and light consistency
2- Add 1 egg at a time and whisk well. Add orange juice and mix
3- Add flour with salt, baking powder and baking soda
4- Fold gently and pour into cupcake moulds. Bake for 20-25 minutes. Check at last minutes with a toothpick. If it doesn’t come out clean, bake for another 5 minutes
5- When baked, take them out and unmould. Let them cool completely. Make a cavity on top approx.1.5 inch deep with a sharp knife and fill 1 teaspoon of Marmalade into each. Cover each and prepare for the frosting
Method for frosting – :
1- Add the chilled whipping cream to a bowl and place it into another bowl of ice
2- Beat with an electric beater until fluffy and light
3- Add melted butter and whisk again. Add powdered sugar little at a time and beat
4- Add cherry puree little at a time and beat to incorporate everything
5- Fill the piping bag with a nozzle in.
6- Frost each cupcake and decorate with cherries
