Orange Peel Candy

Most of us might have relished citrus candies in our childhood days, as these are the most favourite of all. I too love those flavours and often bake orange flavoured cake n cupcakes in which I Iove to add homemade orange marmalade.Orange marmalade made by me contains orange peels candy n we all in the family love its citrusy flavour.This Christmas when I decided to bake a Christmas fruitcake, I thought to add orange peel candy along with other dried fruits n the result was awesome.These candied peels can be used to decorate cakes, cupcakes n puddings.

Candied Orange Peel

I prepared the candy in advance n stored in an airtight jar. These candied peels are very easy to make with only a few ingredients. They add amazing citrusy flavours to the cakes.I add them in the cake batter along with other dried fruits and also kept some for garnishing. When these candies are made in the sugar syrup, these are to dry up under the fan, keeping on the wire rack but I prefer them to store with its sugar syrup in a glass jar. Peel from 2 kinnows yields 1 bowl of candy

 kinnow/Mandarin oranges (a hybrid variety of oranges )are better than any other types for this recipe as their peels have the less white portion and pith is not much bitter too. These peels have nutritive value too. They contain calcium, copper, magnesium, vitamin A and C.Dried candied peel can be munched to avoid bad breath. New research has found them to have  anti-cancer activity
Preparation time – 10 minutes
 Cooking time – 60 minutes
Ready in 70 minutes
INGREDIENTES -:

1- Kinnow or Mandarin – 2 nos
2- Water – 1 cup
3- Sugar – 2 cups
METHOD -:
1- Rinse the kinnows. Cut the top and bottom off each orange and score the skin into quarters.
2- Remove the skin (peel and pith, the white part), and cut the skin into strips about ¼” wide.
3- Place the strips of peel in a large saucepan filled with cold water.

4- Boil the stuff on high heat for 15 minutes. Drain the water from the peels and repeat this process again for more 15 minutes.

5- In the same pan, boil together 2 cups of sugar with 1 cup of water.

6- Let the stuff on constant boiling on medium heat. cook for 30 minutes or just until the peels are transparent.

7- Store them with the syrup in a glass jar when cooled completely
Notes -:
*Candied peels can be prepared from other citrus fruits like lemon also

*These candied peels can be dried on a wire rack for few hours under the fan.Toss them in granulated sugar and store them in an airtight jar
