This variant of Cucumber Poha is an everyday essential in the state of Karnataka. It is called Cucumber Avalakki there. Especially during the summer season, this is much-loved breakfast due to the cooling properties of cucumbers. This feels not only fresh but also very flavorsome, light, and cool during hot weather. The base is undoubtedly the poha/flattened rice, but the star ingredients are grated Cucumber and fresh Coconut

The making of cucumber poha is very easy in no time.  If you have soaked poha in hand, this gets ready under 10 minutes. All the ingredients required are very basic and readily available in the kitchen.  So let’s try this different yet tasty Cucumber Poha

●  INGREDIENTS REQUIRED

Poha/Flattened Rice – 2 bowls
• Seedless cucumber  – 2 nos.
• Fresh coconut  – 2 medium-sized pieces
• Raw peanuts  – 1 cup
• Cashew nuts – 5-6 nos.
• Onion – 1 no.
• Ginger – 1-inch piece
• Green chilies – 1-2 nos.
• Curry leaves – 4-5 sprigs
• Cooking oil – 2 tbsp
• Salt – To taste
Mustard seeds/Rai – 1 tsp
• Lemon juice – 2-3 tsp


●  PREPARATIONS TO BE DONE

1 – Rinse poha 2-3 times in a colander and allow it to stay there for 30 minutes

2 – Wash the cucumbers and grate them with their skin (squeeze grated cucumber if there is a lot of water in them)

3 – Grate coconut pieces with a grater

4 – Add a few curry leaves, grated cucumbers, and coconut when the poha is soaked and softened. Combine all the ingredients

5 – Chop the onion, ginger, and green chilies

●  STEP-BY STEP

1- Heat oil in a kadahi and add raw peanuts and cashews.  Fry the nuts until golden brown.  When done, remove them from the oil

2- Next, add mustard seeds followed by curry leaves. Allow them to crackle

3- Next, add chopped onions, ginger, and green chilies. Sauté them for a minute

4- Add now the mix of poha, cucumber, and coconut.  Stir fry them for 2-3 minutes

5- Add salt and lemon juice at this stage and mix well

6- Add fried nuts and combine well

7- Cucumber poha is ready to serve. Allow it to cool down and serve as the first meal of the day
