PEANUT RICE/SOUTH INDIAN STYLE PEANUT RICE/MASALA RICE WITH PEANUTS

Peanut rice is a flavourful version of rice that is a regular part of South Indian cuisine.  Loaded with peanuts and other seasonings this peanut rice includes both the whole peanuts and a ground masala that is prepared with roasted peanuts, urad dal, red chilies, and tamarind. Rice is boiled as a first step in the whole preparation.  Second part includes making the peanut masala. This peanut masala is the star ingredient that gives the boiled rice a yummy nutty taste and wonderful aroma

This peanut masala, accompanied with whole groundnuts, curry leaves, mustard seeds make this rice preparation a complete bowl of taste, aroma, and flavors. This peanut rice can be paired with plain curd, raita, pachdi, or any curry and kurma.

●  INGREDIENTS REQUIRED FOR BOILING RICE

• Long grain rice – 1 cup
• Water for boiling rice – 4-5 cups
• Salt for boiling rice – 1 tsp

●  INGREDIENTS FOR PEANUT MASALA
• Cooking oil – 1 tbsp
• Roasted peanuts – 3 tbsp
• Urad dal – 1 tsp
• Chana dal – 1/2 tsp
• Whole red chilies  – 2-3
• Cashew nuts  – 5-6
• Imli/ Temrind  – 1 small piece
• Hing/asafoetida  – 1/2 tsp
• Imli/ Temrind  – 1 small piece
• Freshly grated coconut(optional)- 1 tbsp
• Curry leaves  – 7-8 nos.

●  INGREDIENTS FOR PEANUT RICE
• Raw/Roasted peanuts  – 4-5 tbsp(half bowl)
• Curry keaves – 8-10
• Mustard seeds/Rai – 1 tsp
• Ghee – 1 tbsp

●  PROCEDURE TO MAKE PEANUT RICE
●  PART – 1  BOILING OF RICE
1 – Rinse rice nicely and keep on fire with water and salt in a pan . Allow the first boil at high flame and then bring the flame at low. Allow to cook the rice.(Avoid overcooking)

2 – When rice is boiled, Strain it through a colander and keep aside

●  PART 2: MAKING PEANUT MASALA
1- Heat oil in a pan and add urad dal and chana dal. Allow them to fry up to a golden

2- Add hing/asafoetida and mustard seeds/rai. Allow them to splutter

3- Add whole red chilies and imli(tamarind)piece

4- Add roasted peanuts, cashew nuts, and curry leaves and stir them for a while. Turn off the flame when all these are roasted well

5- When the above stuff is cooled down completely, add them to a grinder and grind to a fine powder.  Keep the peanut masala aside


●  PART – 3  MAKING PEANUT RICE

1- Heat oil in a pan and add groundnuts.  Fry them to golden brown. 

2- Add curry leaves and mustard seeds. Allow both to splutter

3- Add boiled rice to peanuts and curry leaves

4- Add ground peanut masala to the rice

5- Combine well rice and peanut masala

6- Add ghee at the final stage and mix well with the rice and peanut masala. Transfer the cooked peanut rice to a serving dish

7- Yummy peanut masala rice is ready to serve in lunch or dinner with raita, pickles, curries or dal preparation
