Fruit Custard With Caramel Sauce

Custard with seasonal fruits is my all-time favourite. It is a win-win dessert every time!! Yesterday I was recalling and missing my good old childhood days when my mother used to cook rustic but yummiest meals for us. There were not many options for new recipes at that time. Sundays were the special days when something different was cooked. Indian sweets or desserts were cooked generally on Sundays or special occasions. Sometimes fruit custard or fruit cream was prepared in the name of continental desserts (thanx to the internet that being global we prepare countless delicacies  from all around the world these days!!)
Still being nostalgic I decided to prepare a custard pudding with mixed fruit but with a twist. I made a caramel sauce which took this simple desert’s flavour to another level making it a satisfying one. Not only this, I added a purée of fresh fruits into the custard. Have you ever tried fruits with caramel sauce? Try once and you would definitely fall in love with this combination. I can bet the flavour is to die for!! You can set this custard pudding in separate bowls to serve individually

 ●  Ingredients

•  Full fat milk – 1 lt + half cup

•  Vanilla custard powder – 3tbsp

 •  Sugar – 4 tbsps

•  Seasonal fruits like mango, peaches, and plums etc. – 2 nos. each or more

 ●  INGREDIENTS FOR CARAMEL

•  Sugar – 1 cup

•  Water – 1/4 cup

•  Butter – 2 tbsp

●  PREPARATIONS TO BE DONE

Blend half quantity of the fruits into a purée to add into the custard 

 ●  Instructions For Caramel

 1 – Add water and sugar to a pan and keep for boiling. After 3-4 minutes the water will reduce and sugar will start caramelizing from the sides

2 – Avoid stirring this with a metal spoon, just move the pan in a circular motion so that all the sugar caramelize evenly

3 – It will take 3 minutes to get the golden colour. Time to add butter and there will be vigorous bubbling of syrup. Switch off the gas and pour this syrup evenly into  bowls as a first  layer

4 – When the syrup cools down, refrigerate the bowls and prepare for custard

 ●  INSTRUCTIONS FOR MAKING CUSTARD 

 1 – Keep 1 lt. of milk in a heavy bottom pan and add sugar

 2 – Mix well custard powder with half a cup of cold milk and set aside. This mix should not have lumps

 4 – Add custard powder-milk mix to milk very slowly and stir continuously

 5 – Milk will start to thicken and cook for more than 5 minutes at low flame
 6 – Switch off the gas and let it cool
 7 – Add blended fruit purée and mix well with custard

8 – Pour custard as a second layer into prepared bowls with caramel

 9 – Refrigerate the bowls for 4 hours or more to chill
10 – When chilled,  upside down the bowl
11 – Custard with caramel sauce will ooze out of the bowl. You can’t wait  to dig into divinely delicious  fruit custard with caramel sauce
12 – Serve the chilled dessert with more fresh fruits
