We, in India are blessed with countless chaat dishes. Although these are street food specialities, but we can prepare them at home without fuss. Actually we make them quite enthusiastically than our routine menu. If we have curd, a few chutneys, and chaat masala ready in hand, these chaat dishes become easier to prepare . Each and every age groups are crazy for these droolworthy dishes.

This dahi bhalla makhana chaat has various pleasing characteristics, like it is creamy with sweetened yoghurt. It is soft and savoury because of super soft bhalle (fried vade of urad-moong dals). Spicy with chili-coated boiled potatoes. Tangy with sour and spicy green chutney. Tongue-tickling sweet chutney with tamarind and last but not least, the super food Makhana (fox nuts)that comes as a show stopper..So enjoy the lip-smacking appetizer, dahi bhalla makhana chaat to your fullest

● PREPARATIONS TO BE DONE
1 – Fry small-sized (soaked, ground, and fermented dal bhalle (dal vade) to get a golden-brown colour

2 – When fried, dunk them into water so that they swell up to become soft

3 – Whisk dahi (curd) to make it creamy

4 – Boil potatoes to perfection. When done, cube them and coat them with salt, red chilly powder, and pudina-bhuna jeera masala

● INGREDIENTS REQUIRED FOR DAHI BHALLA MAKHANA CHAAT
• Small sized Bhalle(vade) – 10-12 nos.
• Thick fresh yoghurt (dahi) – 1 bowl (500 g)
• Boiled potato cubes – 1 cup
• Boiled chana (chickpeas) – 1/4 cup
• Flavored makhana (mint flavored)
• Tamarind (Imli )ki chutney – 3-4 tbsp
• Green chutney – 2-3 tbsp
• Salt – To taste
• Red chilly flakes – 2 tsp /To taste
• PUDINA-BHUNA JEERA MASALA – 2 tsp
● IT’S PLATING TIME IN LAYERS
LAYER – 1
• Add whisked dahi(curd) to a serving bowl
LAYER – 2
• Add Tamarind /Imli Ki Chutney and spread all around

LAYER – 3
• Place soaked and squeezed bhalle (vade) all over curd

LAYER – 4
• Spread Raw Mango-Mint Green Chutney all around

LAYER – 5
• Spread 2-3 tbsp Tamarind chutney

LAYER – 6
• Spread masala coated (red chilly, salt, and pudina-bhuna jeera masala) Aloo cubes all around

LAYER – 7
• Add a thick layer of curd
LAYER – 8
• Spread boiled chana all over the curd layer

LAYER – 9
• Finally spread mint flavoured makha /fox nuts, and sprinkle red chilly flakes, and pudina-bhuna jeera masala

1 – Dahi(yoghurt)should be fresh and thick
2 – Serve the chilled chaat. It feels divine on hot days
