
Every night after a wholesome meal, there is always some leftover. Why let it go to waste? With some imagination and a little effort, we can create mouth-watering treats with leftovers. If you have left some food, you always think about how I would eat it the next day— but there are ways to transform this food into a treat

The same happens with me occasionally, and most of the time I give it a new life by transforming it into something interesting and yummy. In the morning today, when I found that there was no vegetable to cook for lunch, I got ready to make some rice preparations with last night’s leftover lal lobia/rongi. There was a little effort of boiling the rice and some chopping work to do, and a yummy dish got prepared within minutes

Ingredients Required
• Basmati rice – 1 cup(washed and soaked)
• Water for boiling rice – 5 cup
• Leftover cooked lobia/rongi curry – 1 bowl
• Salt – 1+1 tsp
• Red chilly powder – 1 tsp
• Garam masala powder – 1 tsp
• Cumin seeds – 1 tsp
• Finely chopped onions – 2 tbsp
• Finely chopped tomatoes – 2 tbsp
• Finely chopped ginger and green chillies – 1 tsp each
• Oil – 1 tbsp
• Lemon juice
Step By Step
1– Take a saucepan and add water, rice and 1 tsp salt and keep for boiling on medium flame

2- When boiled to perfection, drain the extra water with the help of a strainer and prepare for a tadka

3- Heat oil and add cumin seeds. Allow it to crackle
4- Add chopped onions, ginger, and green chilies and cook for a minute

5- Add salt and all the powdered spices, and cook for a while.

6- Time to add chopped tomatoes. Cook this masala until it leaves the oil


7- Add leftover lobia curry and mix with the masala

8- Time to add cooked rice. Combine well

9- Mix well and add lemon juice to finish. Tasty Lobia Rice dish is ready to enjoy. Garnish with some onions and lemon wedges
