Mix Veg Pasta (no cheese)
Whenever I plan to cook pasta I don’t have to worry about the absence of cheeses or cream in my kitchen pantry…as most of the times, I use to cook pasta without dairy.I feel that there are many ways that you can make pasta creamy still without using the dairy stuff.Earlier I have shared pasta-with-hummus-creamy-pasta in my blog ..This time one more pasta recipe without cream, cheese or eggs.
No use of cheese does not mean that your pasta is not delicious but this vegan pasta has all the taste and creaminess which comes with the addition of some veggies which I have blended to a coarse paste

I have used the stalks (danthal) of broccoli which I had blended with onion n garlic.A few more veggies added to it do not remind us the absence of cheese in this delicious pasta

Preparation time – 20 minutes
Cooking time – 10 minutes

INGREDIENTES -:
 
Pasta of any type – 1 cup or 200 gms(I used elbow pasta)
Broccoli with its stalk (danthal) – 1 medium floret
Finely chopped carrots,
Finely chopped 3 types of bell peppers – 1 cup
Chopped onions – 1/2 cup
Olive oil – 2 tbsp +1 tsp while boiling +2 tsp for drizzling over cooked pasta
Garlic cloves – 5-6
Dried herbs like oregano, basil and thyme etc – 2 tsp + 1 tsp for topping
Salt to taste + some while boiling pasta
METHOD -:
First of all keep pasta for boiling with sufficient water, oil and salt
Separate broccoli stalk, chop finely and blend it with onion and garlic to a coarse paste
Chop broccoli into small florets
When pasta is cooked, separate it with a sieve and keep aside.Also keep some pasta water aside
Heat oil and add blended coarse paste of broccoli stalk (danthal) , onion and garlic and cook for a while
Add other chopped veggies and stir
Add salt and all the dried herbs n chilly flakes
Add boiled pasta along with some of its water
Mix everything together and cook for a while
Serve the dish with a drizzle of olive oil, dried herbs and chilly flakes

METHOD -:

Chop bell peppersbroccoli into small florets
When pasta is cooked, separate it with a sieve and keep aside.Also keep some pasta water aside
Heat oil and add blended coarse paste of broccoli, onion and garlic and cook for a while

Add broccoli first and then other chopped veggies and stir

Add salt and all the dried herbs n chilly flakes
Add boiled pasta along with some of its water
Mix everything together and cook for a while

Serve the dish with a drizzle of olive oil, dried herbs and chilly flakes
