This breakfast dish is very easy to make. I used to cook spinach leaves in little oil, and then crumbled paneer was added with salt and minimal spices. An omelette is cooked nicely, and this palak and paneer combo is stuffed into the omelette. Palak and paneer are an absolutely delightful combo that never goes wrong. This dish is a favorite of kids who never say no to eggs, palak, and paneer.

●  INGREDIENTS REQUIRED

• Eggs – 3 nos.
• Palak/Spinach – 250 g
• Paneer/Cottage Cheese  – 100 g
• Spring onions  – 1-2 nos.
• Chopped garlic – 1/2 tsp
• Oil/Butter – 1 tsp + 1 tsp
• Salt – 1/2 tsp + 1/2 tsp
• Black pepper powder  – 1/2 tsp + 1/2 tsp
• Red chili flakes – 1/2 tsp +1/2 tsp
• Italian seasoning  – 1/2 tsp + 1/2 tsp

●  STEP-BY-STEP INSTRUCTIONS
●  STEP – 1

1- Rinse spinach leaves and dry them with the help of a kitchen towel

2- Heat oil/butter in a pan and add chopped garlic. Sauté the garlic and add the white part of the spring onions. Sauté onions for a minute

3- Add spinach leaves and allow them to cook for a minute or two

4- Add crumbled paneer and sauté it with spinach


5- Add salt and all the powdered spices(pepper powder, red chilly powder, and Italian seasoning). Combine all the spices with the veggies and turn off the flame
☆  Avoid overcooking the veggies

●  STEP – 2

1- Whisk eggs with spring onion greens, salt, pepper powder,  red chilly flakes,  and Italian seasoning.  Keep aside

2- Heat oil/butter in another pan and add whisked eggs. Allow it to cook at a low flame by covering with a lid

3- When the down layer is cooked, carefully flip it over to cook the other side.  When the omelette is cooked,  turn off the flame

4- Place cooked palak-paneer sabzi on the omelette and fold it onto the plate

5- Serve the tasty palak paneer stuffed omelette with toasted bread, any dip, or tomato ketchup
