 Banana Blueberry Muffins
 
Banana blueberry muffins make a great combination in cakes,  a perfect match made in the baking world if I don’t exaggerate. Bananas are used as a base, so these are eggless. Blueberries are used to enhance the taste.
These muffins are juicy, buttery and soft. The sweetness of ripe bananas and sweet-sour taste of blueberries give a unique taste to them which is loved by all.
As fresh blueberries are not available most of the time of year, the dried version of it can be used by soaking overnight in the orange juice.I too have used dried one and soaked them overnight.

Preparation time – 10 minutes

Baking time – 30 minutes

INGREDIENTS:
 
All-purpose flour – 1 cup or 125 gms.
Ripe bananas – 2 nos.
Blueberries (dried) – ½ cup
Softened butter – 100 gms.
Powdered sugar – 80 gms
Cinnamon powder – 1 Tsp
Baking powder; 1 Tsp
Baking soda – ½ tsp
Half cup of orange juice to soak berries overnight
 
 
Directions
1-  Cream butter and sugar until fluffy and light
 

2-  Mash bananas with a fork and add to butter and sugar mix

3-  Add soaked blueberries and cinnamon powder

 

4-  Add sifted flour with baking powder and soda. Add this to the banana mix and fold gently.

5-  Pour this mixture equally into muffin moulds and bake for

30 minutes at 180 degrees in a preheated oven(Pour the batter to the 3/4 into the moulds)

 

6-  let them at rest for 5 minutes in the oven. Next, when they cool down completely, take them out on a wire rack to cool down completely

7-  Yummy, moist and super soft banana-blueberry muffins are ready to enjoy
