HOMEMADE CREAM CHEESE/EASY TO MAKE PEPPER FLAVOURED CREAM CHEESE AT HOME
Sandwiches are the most preferable breakfast at my house. A layer of cream cheese on a slice of bread and a heapful of veggies or boiled egg chunks on it, are very favorite of ours. Infact, we are addictive to such snacks that go very well with this creamy, salty, and smooth cream cheese. A big amount of my kitchen budget had been spent to buy this cream cheese boxes until I got to know the easy-peasy process to make this cheese
After finding the solution which was quite astonishing that it was very easy and convenient to prepare this delicious cream cheese at home. Since I have got to know the process, I prepare it very enthusiastically once a week. The base of cream cheese is our loved cottage cheese(paneer) which is a must in our refrigerator. We can eat paneer dishes any time of the day. A few add-ins like processed cheese, cream, salt and seasoning like pepper or oregano work wonderfully to get the final result. Hope you would be pleased to know the method of this delicious and versetile cream cheese dip. If you are making it in small batches, there is no need to add preservatives otherwise, a small quantity of white vinegar has to be added while blending the ingredients . I keep my cream cheese very light and healthier. Instead of adding heavy cream, I add small quantity of processed cheese and milk while blending

● INGREDIENTS REQUIRED
• Soft Cottage Cheese /paneer- 200 gms (See Notes)
• Grated processed cheese – 2 tbsp
• Milk – 3-4 tbsp
• Salt – 1/2 tsp
• Black pepper powder – 1/2 tsp
● HOW TO MAKE CREAM CHEESE
1 – Take a wet blender and add soft cottage cheese (paneer) chunks, grated processed cheese, and milk
2 – Blend all the ingredients giving pulse a few times or until you get a creamy consistency
3 – You will get a smooth and creamy cheese. Transfer the cream cheese to a glass bowl or a jar
4 – Add salt and crushed pepper powder. Mix tham well with the cream cheese
5 – Smooth and silky cream cheese is ready in few minutes. Use it as a spread on bread slices and wraps. You can use it as a dip to enjoy vegetable sticks, fritters, crackers, or kebabs
NOTES AND TIPS
1 – You can easily make soft cottage cheese at home. For this, keep 1 l whole milk on flame to boil.
2 – Before the boiling point comes, add slowly lemon juice from 1 lemon or 3-4 tbsp white vinegar into the milk. Keep stirring and switch off the flame. Cover the sauce pan with a lid
3 – After 10 minutes you will notice that milk has curdled and milk solid has been separated leaving greenish water
4 – Strain the cottage cheese through a strainer with a muslin cloth and rinse it with some fresh water
5 – Allow the cottage cheese to remain in the sieve for 30 minutes and you get soft cottage cheese weighing approximately 200 grams
