ROASTED PEPPER – CREAM CHEESE DIP/SPREAD
Dips or spreads are side dishes or condiments that are served along with snacks, appetizers or entrées before the dinners. All types of dips are the pride of party dinners. Dips are prepared with a variety of bases; for example yoghurt, mayonnaise, cheeses- hard and soft. Numerous add-ins increase their flavours to the next level. In other word, dips are addictive in terms of taste and flavours. These are loved for being rich, creamy, and flavoured with a number of different seasonings, garden veggies, greens, and aromatics like garlic etc.
Today’s dip is very unique and versatile. This Dip is creamy, rich and has a depth that comes with roasted bell pepper and garlic. Roasted Pepper Cream Cheese Dip is served as a dip as well as a spread on breads, wraps, and, crackers. The base of this dip is homemade cream cheese. Smoky red bell pepper and garlic are the star ingredients of this dip. Dried basil, oregano, paprika, and olive oil give it particular Italian flavours that we are well familiar with. A little vinegar is added to increase the shelf life of this wonderful dip

● INGREDIENTS REQUIRED
• Homemade Cream Cheese– 1 cup
• Red bell pepper – 1 no
• Garlic – 4-5 cloves
• Olive oil – 2 tsp
• Salt – 1 tsp
• Mixed Italian seasoning (basil, oregano)- 1 tsp
• Paprika – 1/2 tsp
• Sugar – 1/4 tsp
• White vinegar – 1 tbsp
● TOOLS AND VESSELS REQUIRED
• Wire rack for roasting bell pepper and garlic
• Blender (electric or hand)
● PREPARATIONS TO BE DONE
1 – Pierce bell pepper at 2-3 places with a knife and place on wire rack with garlics
2 – Roast the pepper and garlic at low flame until the skin is charred. Turn the pepper at intervals and it takes 10 minutes to become charred
3 – When pepper and garlic is roasted, cover them with a lid so that the skin is soft due to steam and comes out easily
4 – Peal off the skin of pepper and garlic. Rinse with water and chop coarsely. Remove and discard the seeds
● HOW TO MAKE THE PEPPER-CREAM CHEESE DIP
1 – Take a blender and add cream cheese, roasted pepper, garlic, Italian seasoning, olive oil, paprika, salt, sugar, and vinegar
2 – Blend all the ingredients giving pulse several times to make this creamy dip
3 – Taste and make sure that all the ingredients are perfectly well. Add any, if needed. ☆Tasting is good for perfect flavours and texture
4 – Roasted pepper cream cheese dip/spread is ready. I love this condiment to spread on a toasted bread slice
NOTES AND TIPS
● Roasting bell pepper can be done in a preheated oven at 200°Celsius for 25-30 minutes. Rub the peppers with oil and place on a baking tray. Roast them for 25-30 minutes by turning sides once or twice
