The humble rice gets the makeover with any possible way you just think of the options. The plain cooked rice has the capability to absorb any flavors. This lemon rice is just an example of a wide range of flavorsome rice dishes.
This lemon rice is the most loved rice dish from the south of India. This is a regular rice dish from every common household. This is prepared as an everyday regular dish as well as on occasions too. In Kannad this Lemon Rice is called Chitranna and Elumichai Sadam in Tamil

This rice dish is prepared by two methods. First is cooked as a one-pot meal and the other way is to steam the rice separately and a tadka of some nuts, mustard seeds, a few lentils, curry leaves whole red chilies and the lemon juice (as the name suggests) is added finally to complete the LEMON RICE dish. This is a perfect tiffin box idea as well as suitable while traveling. This incredible rice dish goes best with pickles and plain curd. If you have leftover steamed or boiled rice in the refrigerator, it prepares under 5 to 7 minutes. Here I’m sharing the Lemon Rice dish from scratch by boiling the rice first. INGREDIENTS REQUIRED
• Rice(any type) – 1 cup
• Water for boiling rice – 4-5 cups
• Salt – 1 tsp
• Oil – 1 tsp
INGREDIENTS FOR TADKA/TEMPERING
• Oil – 1 tbsp
• Chana dal – 1 tsp
• Raw peanuts – 1/4 cup
• Cashew nuts – 5-6
• Curry leaves – 2 springs
• Whole red chilies – 2 nos
• Lemon juice from 1 lemon
• Salt – 1 tsp
• Red chilly powder – 1 tsp
• Haldi/turmeric powder – 1/4 tsp
• Asefotida /hing powder – 1/2 tsp
• Crushed black pepper – 1/2 tsp

DIRECTIONS TO COOK LEMON RICE
1- Firstly rinse the rice well for at least three times and add to a saucepan with water, salt, and oil. Boil rice till perfection.

2- When rice is done, sieve through a colander and keep aside and prepare for a tadka/tempering

3- For tempering, Heat oil in a pan and add peanuts. When half roasted, add chana dal and cashew nuts. Fry the nuts and dal till golden

4- Next, add mustard and cumin seeds to the hot oil. Allow them to crackle. Add whole red chilly, and curry leaves at this stage. Allow them to splutter

5- Next, add all the spices and salt. Give a quick stir and add lemon juice. Mix well

6- Now add boiled rice and combine all the ingredients together. Lemon rice is ready to serve

7- Serve the tasty lemon rice with curd, curries and pickle
