Peanut Chutney/Groundnut Chutney

 Indian cuisine can’t be imagined without chutneys. Whether it is a breakfast or evening snack time, most of the delicacies are served with several different chutneys or dips. One such chutney is peanut or groundnut chutney. This chutney is generally paired with a South Indian breakfast or evening snack like idlis/vadas/dosas or rice
All the South Indian states have their variations of groundnut chutney. The taste differs with a little change in the ingredients, yet the basic method is the same

This simple yet delicious chutney is so easy to make with a few ingredients that you would love to make it quite often. This chutney can be used as a dip or a spread for the sandwiches also.
For this chutney, you have to ground roasted peanuts along with  garlic, ginger, cumin seeds, and green chilies to get a smooth paste, and finally, a tadka or tempering is added to it to make it more flavourful

INGREDIENTS REQUIRED 

Peanuts – 1 cup or 200 g
Green chilies – 2 nos.
Cumin seeds – 1 tsp
Garlic cloves – 2 nos.
Ginger – 1-inch piece
Oil – 1 tsp
Water – a half cup or 100 ml
INGREDIENTS REQUIRED FOR TADKA/TEMPERING 
1- Oil – 1 tsp
2- Curry leaves – 5-6
3- Whole red chilies – 2(chopped into small pieces)
4- Mustard seeds – 1 tsp
5- Cumin seeds – 1 tsp

 INSTRUCTIONS 

1- Heat oil in a pan and add cumin seeds followed by green chilies
2- Add peanuts and roast them until their colour changes a little. It will not take much time as we are using roasted peanuts
3- Switch off the flame and let it cool completely
4- Add this to a blender jar with water and blend until a smooth paste
5- Transfer the chutney to a bowl and prepare for tadka/tempering
INSTRUCTIONS FOR TADKA 
1- Heat oil in a pan and add mustard and cumin seeds and allow them to splutter
2- Add dry red chillies and curry leaves
3- Pour this tadka over the peanut chutney
4- Pair this chutney with idli, dosa, rice, or vadas
