Urad dal vadas or medhu vadai are a perfect breakfast to kick-start a day. This popular breakfast is paired with different chutneys and delicious sambar. These donut-shaped vadas are relished and eaten across the whole country.
To make this vada, split urad dal is soaked for hours and then ground to make a batter adding little water. As the batter remains sticky so I add semolina/sooji to bind it, also an addition of some sooji makes crisp vadas. Some aromatics like ginger, green chillies and black peppercorns enhance the taste. These deep-fried crisp and tasty medhu vadai with sambar keep you full for hours as they make a complete and wholesome meal in itself

Ingredients
1- Dhuli/split urad dal/ (soaked for 5-6 hours or overnight ) -: 1 cup
2- Rava/semolina – 1/2 cup
3- Salt, red chilly powder, jeera/cumin powder – to taste
4- Finely chopped ginger – 2 ts
5- Finely chopped green chilly – 2 teaspoons
6- Curry leaves and coriander leaves(finely chopped) – 2 tbs
7- Cumin seeds – 1 tsp
8- Black peppercorns(crushed) – 1 tsp
9- Sufficient oil for frying
Instructions
1- Drain extra water from soaked urad dal and grind it with very little water(1-2 ts) to a smooth consistency
2- Add rava/ semolina and mix well to allow semolina to get absorbed
3- Add salt and all the other ingredients mentioned above. whisk it well for 5 minutes so that some air gets Incorporated well into the batter
4- Heat oil in a kadahi keeping the flame at medium heat
5- Wet your palm and place 1 tbs batter on it. Make a hole in the centre with your thumb to get its signature shape
6- Slowly slid the vada into the oil to fry till pale golden
7- Now flip it slowly to fry the other side until golden crisp
8- Serve this yummy vadas with sambar and coconut chutney
