
CHICKPEA-WALNUT-CRANBERRY SALAD
If you’re in search of healthy side dishes, the chickpea-walnut-cranberry salad is a superior option to brighten up your dinner table. This salad is rich in protein, vitamins, and fulfills daily fiber needs, courtesy of the ample cucumber and tomato content. Its refreshing, savory, and flavorful characteristics make it exceptional. Although the salad dressing is kept very basic, it gives a nutty, sour, and a dash of sweet flavor at the same time

Walnuts introduce a crunchy texture and offer vital minerals, vitamins, antioxidants, and omega-3 fatty acids. Cranberries lend a sweet-sour taste and provide vitamin C. In short, the chickpea-walnut-cranberry salad is a perfect combination of health, taste, and freshness.
This salad is remarkably filling due to the chickpeas, to the extent that a substantial serving may alleviate the need for dinner. Whenever I am not in the mood to cook much, a large bowl of this salad is sufficient to satiate my appetite.

● INGREDIENTS REQUIRED
• Boiled chickpeas/White Chana/Garbanzo Beans – 2 cups
• Walnuts – 1/2 cup
• Cranberries – 1/4 cup
• Finely cubed cucumber – 1 cup
• Finely cubed tomatoes – 1/2 cup
● INGREDIENTS FOR DRESSING
• Lemon juice – 3 tbsp or to taste
• Honey – 1 tbsp or to taste
• Extra virgin olive oil – 1 tbsp
• Salt – 1/2 tsp or to taste
• Crushed peppers – 1/4 tsp
● PREPARATIONS TO BE DONE
• Soak the chickpeas overnight and boil in a pressure cooker for 10 minutes or until 4-5 whistles come.
☆Plz be cautious that chickpeas should not be overcooked or mushy . Cooking time varies from cooker to cooker
• To make the dressing, add olive oil, lemon juice, honey, salt, and crushed peppers to a mixing bowl and combine them nicely. Keep the dressing aside
● WALK THROUGH
• Add boiled chickpeas, diced cucumber, tomatoes, walnuts, and cranberries to a mixing bowl and combine all the goodies
• Drizzle the dressing all over the chickpea salad and combine gently
• Refrigerate the salad for 10 minutes to get the perfect taste
