MANGO AND DRUMSTICK PICKLE/ AAM- SEHJAN KA ACHAAR/A UNIQUE SEASONAL PICKLE

Yes, you read it right. This is truly a unique pickle that is made with raw mango and tender drumsticks or pods. These tender drumsticks are available for a few days, and after that, they start to mature and become hard. These tender drumsticks are slightly sweet and full of nutrition.  Actually, every part of the Sehjan/Moringa tree is a storehouse of nutrients.  Its leaves and the pods have a high level of vitamins A and C. Not only this, but they are rich in calcium and iron. Not exaggerating,  Moringa is called a miraculous tree whose each part is usable . I cook a unique sabzi with its buds and flowers that is called ‘Sehjan Ke Phool Ki Sabzi’

I am truly fascinated by this tree, as there are many of them surrounding my house. In April, this tree is covered with hundreds of tender pods like frills. These days, I never lose the opportunity to pluck them to make a pickle with them. I pair them with raw mangoes to make a unique pickle that is not only relishable but also healthy.

Several whole and powdered spices, along with mustard oil, complete the story to make this extraordinary pickle. Whole spices are slightly roasted to make them dry and aromatic. These spices are ground coarsely to add along with red chilli powder, salt, and turmeric powder to make it tastier

●  NOTES AND TIPS

• I use a regular mustard oil without heating it. Raw mustard oil tastes better in pickles. Mustard oil matures naturally in the Sun light

• Always take care of cleanliness of jar, kitchen cloth and your hands while pickling

• All the veggies and spices should be dried completely.  Moisture may spoil the pickle

• There should be sufficient oil and salt. Both the ingredients prevent the fungus that could be spoil the pickle if not added sufficient
• Happy Cooking! Happy Pickling 😊
