ALOO HARA PYAZ SABZI /BABY POTATO-SPRING ONION DRY SABZI
This Punjabi style aloo hare pyaz ki sabzi makes a great combination with the dal preparations. In this way both the dishes complete a Punjabi Thali. This regular thali must have any dal and a dry sabzi as a side dish every day. As the spring onions are available for several months in the year, I cook them with different variations in the season.
Those who lovingly eat the onions must include them in the daily diet, as the spring onions contain several essential vitamins and minerals. This tasty sabzi is one of them that I use to cook at regular intervals. An addition of some regular spices make it tastier. The baby potatoes are tender and cooked with their skin. They make a perfect pairing with the spring onions. The green stems add colour and crunch to this tasty sabzi

INGREDIENTS REQUIRED TO MAKE ALOO-HARA PYAZ SABZI
• Baby potatoes/ Chote Aloo/ – – 8-10
• Spring onions /Hara Pyaz- 4-5
• Finely chopped tomatoes – 1 no
• Finely chopped ginger – 1 tsp
• Finely chopped green chillies – 1 tsp
• Cooking Oil (any) – 2-3 tbsp
• Jeera/cumin – 1 tsp
• Salt – 1 tsp/ to taste
• Turmeric/Haldi powder – 1 tsp
• Coriander powder – 2 tsp
• Red chilly powder – 1 tsp
• Garam masala – 1/2 tsp
HOW TO MAKE THE SABZI
1- Firstly, wash the potatoes well to get rid of the soil(no need to peel the skin as their skin is so thin)
2- Separate the green stems from the bulb of spring onions. Chop the green part, and slice coarsely the white part of the bulb. keep both of them separately
3- Heat oil in a kadahi and add cumin/jeera, when jeera splatters, add baby potatoes. Fry them at high flame by turning after intervals
4- When the potatoes are fried to brown, add the sliced white part of spring onions. Saute them at high flame for 2-3 minutes. Now add salt and all the spices mentionedabove. Cook the spices for 1-2 minutes
5- Add chopped tomatoes and mix them with the sabzi. Cover the sabzi with the lid for a few minutes so that potatoes get softened. Check them by pressing with the spatula (if needed, cook for a few more minutes by covering)
6- Finally add the chopped green parts of the spring onions. Turn gently by the spatula so that they do not lose the crunch
7- Add some more green parts of onion as a garnish. Tasty aloo hara pyaz ki sabzi is ready. Serve this yummy sabzi with any dal preparation. I love this Aloo-Hara Pyaz Sabzi with Punjabi MAH CHANE KI DAL
