OATS DALIA / OATS WITH MIXED VEGETABLES/A SAVOURY BREAKFAST  WITH OATS

Oats (Jaee/जई )has become prominent in the culinary world. We have been aware of the nutritional benefits of all grains and oats are one of them. Oats have been cultivated in many Indian states since ancient times. This grain has numerous health benefits, so widely included in the meals in different ways.

Mixing oatmeal with other grains to prepare the multigrain flour is trending. Oats cookies, oats dosa, oats cheela, oats soup with vegetables, oats sweet porridge, oats savoury dalia or upma, and many more; the options are endless.

Several seasonal veggies are added to prepare oats dalia. This savoury porridge is a booster of energy when taken as the first meal of the day.  This is the best choice for diabetic patients and for those who are following weight loss programmes. This oats dalia is cooked with whole oatgrain. Whole-grain oats retain all the fibre and nutrients that make it so beneficial.

INGREDIENTS REQUIRED

• Plain whole oats – 1 cup
• Water  -2 and 1/2 cup
• Finely chopped beans  – 1/4 cup
• Finely chopped carrot  – 1 medium
• Finely chopped capsicum  – 1 medium
• Finely chopped ginger – 1-inch piece
• Fresh or frozen peas/matar – 1/2 cup
• Cumin/Jeera – 1 tsp
• Salt – to taste
• Red chilly powder  – 1/2 tsp
• Black pepper powder  – 1/2 tsp
• Haldi/turmeric powder  – 1/4 tsp
• Oil – 2 tsp
• Ghee – 1 tbsp (optional)
• Lemon juice – 1 tbsp
• Fresh coriander leaves – 1 small bunch
• Groundnuts – 2 tbsp
• Whole or broken cashews – 2 tbsp

●  METHOD

1- Heat oil in a pan and add groundnuts and cashews. Fry them until they get golden colour. Take them out and keep them aside.

2- Now add cumin/jeera. Allow the jeera to splatter

3- Next, add chopped ginger. Saute ginger for a while

4- Next, add chopped beans and carrots. Saute veggies for 1 minute. Avoid overcooking them to retain the crunch

5- Next, add chopped capsicum and saute them for a while

6- Now add salt, red chilly powder, haldi powder,  and pepper powder.  Combine well

7- Time to add oats and roast it  for a minute with the veggies

8- Next, add two and half a cup of water, corn kernels, and green /frozen peas

9- Cover the pan with a lid and simmer the flame for 10 minutes or until all the water is absorbed. Open the lid and sprinkle lemon juice from half a lemon

10- Add fresh coriander leaves and mix well

11- The oats cook in no time. Add one tbsp ghee and mix well. *Ghee adds the taste and nutrition although this is optional

12- Serve the tasty and nutritious oats dalia in the breakfast
