GREEN SAUCE PASTA/SPINACH PASTA / PASTA IN SPINACH SAUCE

Pasta is comfort food for me. I love it, as this is quite filling that comprises several veggies and sometimes mushrooms or eggs. I love to experiment and cook pasta with different flavors.  Sometimes these flavours are very unique. Today I dared to cook pasta in the spinach sauce. I love to cook spinach in a wide different ways, so could not resist myself to cook pasta in the green sauce prepared with spinach purée

To elevate the green colour,  I added broccoli along with its stem. Florets were blanched in boiling water and the broccoli stem was finely chopped with onions. Chopped coriander stems added extraordinary flavours. Spinach leaves were blanched with cashews to make a thick puree. Cashews or pine nuts add the nuttiness to the puree which is the base of the pasta dish. Cherry tomatoes were lovely in adding contrast to this yummy green pasta. If you are tired of eating red and white purée pasta, then you should definitely try this unique but delicious green pasta in spinach puree

●  INGREDIENTS REQUIRED

• Penne Pasta  – 2 cups
• Water to boil Pasta- 4 cups
• Salt – 1+1 tsp /to taste
• Dried basil leaves- 1 tsp
• Mixed Italian seasoning  – 2 tsp
• Red chilly flakes – 1 tsp
• Crushed black pepper  – 1/2 tsp
• Olive oil – 1+ 3 tbsp
• Cashew nuts – 15 nos
• Milk – half cup /100 ml
• Processed cheese – 1-2 tbsp

●  VEGETABLES REQUIRED

• Spinach leaves – 1 small bunch (250 gms)
• Broccoli florets – 6-8 (medium-sized)
• Broccoli stem  – 1-2 nos
• Onion – 1 large
• Mushrooms  – 3-4 nos
• Coriander stems – 8-10
• Garlic cloves  – 5-6 (finely chopped)
• Cherry Tomatoes – 5-6 (halved)

PREPARATIONS TO BE DONE
1 – Boil 1 cup of  pasta in 4-5 cups of water with 1 tsp salt and 1 tbsp oil (oil prevents Pasta from sticking)


2 – Chop finely onions, garlic, Broccoli stems, and coriander stems


3 – Chop coarsely mushrooms and cut each cherry tomato into half


4 – Blanch broccoli florets to allow them to get a little softened


5 – Rinse the spinach leaves nicely and blanch them with cashews.  Allow them to cool and blend them into a spinach puree

●  FINAL PROCEDURE TO COOK SPINACH PASTA

1- Take a pan or wok and add olive oil. When oil is heated, add chopped garlic and saute (Avoid overcooking)

2- Next, add finely chopped veggies and saute for a minute


3- Now add chopped mushrooms and stir-fry them for a few seconds

4- Add salt, chili flakes, dry basil leaves, and mixed Italian seasoning. Stir them nicely

5- Next, add spinach purée and combine well

6- Combine spinach puree with veggies to incorporate everything together all the ingredients

7- Add half a cup of milk at this stage and mix well. Add processed cheese with milk to make it richer

8- Time to add boiled Pasta and combine well. Now add blanched broccoli florets and cherry tomatoes and mix well

9- Finish green Pasta by adding some chilli flakes and crushed peppercorns

10- Serve and enjoy hot and yummy pasta in spinach sauce 😋 This is yummy
