This custard cake is enriched with vanilla flavour and the sweet-sour taste of cranberries. A handful of cranberries along with colourful cherries make it elegant and extraordinarily tasty.
This classy cake is baked with the best use of vanilla custard powder along with the regular APF. The custard powder gives it a smooth and silky texture. This is an eggless cake and the eggs are replaced with milk fat(malai) and yoghurt. In this way, you get a moist, rich and creamy custard cake. INGREDIENTS REQUIRED

•  APS/All purpose flour – 200 gms
•  Vanilla Custard Powder – 100 gms
•  Milk fat/ Malai/Fresh cream – 1 cup – 200 gms
•  Thick curd/Yoghurt – 1/2 cup
•  Sugar – 3/4 cup /150 gms
•  Tuty-Fruity – 1 tbsp
•  Dried cranberries – 1 tbsp
•  Baking powder – 1 tsp(heaped)
•  Yellow food colour – a pinch

PREPERATIONS TO BE DONE

•  Preheat the oven at 180°C for 10 minutes
•  Combine flour, custard powder, food colour powder and baking powder. Sieve twice to incorporate well
•  Dust the tutti-fruity and cranberries with flour (this would help not to sink them down in the cake)
•  Prepare a cake tin by keeping butter paper at the bottom. Also, grease the sides with oil/butter

HOW TO BAKE THE CAKE

1-  In a blender blend malai, curd and sugar well. When done, transfer the wet mix to a separate bowl
2-  Add the dry mix to the wet mix at intervals and fold gently
3-  Add dusted cranberries and tutti-fruity and mix
4-  Pour the cake mix into the prepared cake tin. Place some cranberries on the top
5-  Bake the cake for 30-35 minutes at 180°C or until the toothpick comes out clean
6-  Allow the cake to cool down completely and unmould it
7-  Enjoy the Vanilla flavoured CUSTARD CAKE at any time of the day
