Chana Dal Khichri
Khichdi or khichri might not be the national dish of India, but it is a much-loved preparation in the most Indian households. A simple dish of rice, lentils and spices has become the comfort food of many. Every Indian state has its own variation of khichri. This superfood is a complete meal in itself
It is a one-pot dish in which rice and Dals/lentils are cooked together and then a tadka or tempering is added to it to make it tastier
Each and every Indian state has its own variation. Today I am sharing Chana dal khidchi from Punjab.It is cooked and eaten with dollops of desi ghee which make it heavenly tasty
Preparation time – 20 minutes
Cooking time – 10 minutes 
Cuisine – Indian
Type – main course
 
INGREDIENTS -:
Rice (washed and soaked) – 1 cup
Chana dal – 3/4th cup
Water – 8 cups
Salt – 2 tsp or to taste
Turmeric/haldi powder – 2 tsp
INGREDIENTS FOR TADKA – :
Ghee – 2 tbsp +1 tsp for topping
Red chilly powder, garam masala, black pepper powder,
Cinnamon stick /dalcheene – 1 no
Whole red chilly – 2 nos
Bay leaf/tej patta – 1-2
Grated ginger – 1 tsp
METHOD -:
Take a pressure cooker and add water, rice, Chana dal, salt and turmeric / haldi powder. Cover the lid and keep on high flame
After 1 whistle slow the flame for 5 minutes
Switch off the flame and let the cooker cool down completely
TADKA/ TEMPERING -:
Heat ghee and add heeng/asafoetida powder
Now add grated ginger and stir
Add cumin seeds and whole red chilly
Add cinnamon stick/dalcheene and bay leaf/tej patta
Add all the powdered spices mentioned above
Pour this tadka over cooked khichdi and serve with more ghee
Simple and rustic chana dal khichri or khichdi is ready to serve
