CHUTNEY STUFFED PANEER KE PAKODE /PANEER PAKODA WITH CHUTNEY STUFFING

There are countless options of pakoras and paneer pakode top them with a soft and creamy inside and a crisp layer of besan outside. I always make regular paneer pakode with a single layer of paneer inside. But this time my paneer ke pakode are very different because flavors burst out of them when you bite. This special flavor comes with homemade green chutney prepared with fresh herbs and a few aromatics

● INGREDIENTS REQUIRED
• Paneer/Cottage Cheese – 250 g
• Green chutney – 1/2 cup (thick)
• Besan/Chickpea flour – 1 cup
• Water for a thick batter – 1&1/4 cup
• Salt – 1 tsp/to taste
• Red chilly powder – 1 tsp
• Ajwain/Carom seeds – 1/2 tsp
• Haldi/Turmeric powder – 1/4 tsp
• Oil for deep-frying – Sufficient Enough
● PREPARATIONS TO BE DONE
1 – Take a paneer/cottage cheese block and cut 10 slices of half-inch thickness
2 – Apply a generous amount of thick green chutney on 5 slices and cover them with other plain slices to make a sandwich
3 – Refrigerate the paneer sandwiches for 15 minutes so that paneer slices absorb the flavors of chutney
● PROCEDURE TO MAKE CHUTNEY STUFFED PANEER KE PAKODE
1- Take a mixing bowl and add besan/chickpea flour, salt, haldi, red chilly powder, and ajwain seeds. Combine well all the ingredients
2- Add little water at times and whisk for five minutes to prepare a smooth and lump-free batter. Keep aside for 20 minutes to set .
3- Meanwhile, heat oil in a kadahi for frying. Check the heat of the oil by dropping a little batter into it. If it comes immediately to the surface, the oil is ready to deep-fry
4- Next, dip each sandwich of chutney stuffed paneer into besan batter and drop carefully into the hot oil. Bring down the temperature of oil to medium
5- Avoid adding too many pakoras at a time. 2 or 3 pakoras are quite enough at a time.
6- Flip carefully the paneer pakoda with the help of frying spatula and fry it until it gets golden brown color all around
7- Deep fry all paneer pakodas like this. Take them out of oil and place on an absorbent paper
☆Adjust the temperature of oil while frying. Add 2 or 3 pakode at a time in the oil to avoid cooling down the temperature of oil
● SERVING SUGGESTIONS
When all the chutney stuffed paneer pakode are fried, serve them hot with veggie salad and tomato ketchup.
