The only thought might come to mind on seeing these chilly or mirchi vada dish that they must be firey!! I too thought the same unless I had  used them.The big-fat rajasthani chillies are in season and when I saw them with the vendor, the only idea came to my mind that I should transform them into a chatpata and flavourful mirchi vada

Mirchi vada is a jodhpuri speciality which is prepared with rajasthani mirchi/chilly
These plump fat chillies are not sharp and spicy but have mild flavour. This is one of the most popular street food which is sold each and every corner in Jodhpur. These are special chillies from Rajasthan and commonly used to make pickle which is very popular as stuffed mirchi pickle or rajasthani mirchi ka bharwa  achaar
To make mirchi vada, boiled and mashed potatoes/aaloo with some mild, flavourful spices are stuffed into mirchi and coated with besan/gram flour batter and then deep fried to make amazing mirchi vadas.These are eaten as evening tea snack or as a side dish with main course.I serve them with home made pav as mirchi vada pav as an evening snack to satisfy hunger pangs

Ingredients For Vada

    • Rajasthani green thick mirchi – 250 gms or 5-6 nos.
    • Besan/gramflour – 1 cup
    • Water for batter – 1 cup
    • Salt – 2 tsp
    • Red chilly powder – 1 tsp or to taste
    • Bhuna jeera /roasted cumin powder – 1 tsp
    • Ajwain/carom seeds – 1 tsp
    • Turmeric/haldi powder – 1 tsp
    • Sufficient oil for deep frying
Ingredients for stuffing
    • Boiled and mashed potatoes/aloo – 2 nos(medium sized) which yields approx. 1 cup
    • Salt – 1 tsp or to taste
    • Red chilly powder – 1 tsp
    • Aamchur /dry mango powder – 2 tsp
    • Jeera/roasted cumin powder – 1 tsp
    • Saunf/ Fennel powder – 1 tsp

 Instructions For Stuffing

1- Add all the spices and salt to boiled and mashed potatoes and mix everything well
2- Keep this aside to stuff into chillies
Instructions for mirchi vada
1- Make a thick batter of besan/gram flour,salt and all the spices except oil and keep aside
2- Make a slit in mirchi in a way so that their ends remain joined
3- Stuff aloo/potato masala into cavities and keep aside
4- Coat these stuffed mirchis with besan batter and deep fry in hot oil until golden pale.
5- Serve these mirchi vadas with home-made pavs and chutneys
