DAHI ARBI / दही अरबी सब्जी

Dahi Arbi is a very tasty sabzi with arbi/taro which is prepared with the combination of curd and few regular spices. This simple dish has no onion garlic masala but has dahi /curd as a base. This quick to cook sabzi is prepared in no time. All type of arbi preparations are my all-time favourite but generally, I cook this dahi arbi during fasting days when I avoid onion based curries

This healthy root vegetable is available the whole year and cooks several tasty dishes. Although this is quite gooey, starchy and sticky, yet it has a great taste. This should be included in the diet for its innumerable health benefits.. Apart from its great taste and texture, arbi also provides a range of health benefits with its high fibre and antioxidant content facilitating weight loss and immunity.Ww should definitely include this healthy root in our regular menu

INGREDIENTS REQUIRED FOR DAHI ARBI

• Arbi/Taro/Colacasia – 500 gms
• Dahi/Curd – 1 cup/250 gms
• Kashmiri red chilly powder – 2 tsp
• Haldi/turmeric powder – 1 tsp
• Coriander/dhania powder – 2 tsp
• Roasted cumin/jeera powder – 1 tsp
• Salt – 2 tsp/to taste
• Jeera/whole cumin – 1 tsp
• Oil – 3 tbsp
• Water – half cup

DIRECTIONS

1-  Wash, peel and cut the arbi into medium-thick round slices

2-  Add salt and all the powdered spices to the curd and whisk well.

3-  Take a kadahi and add cooking oil. Heat at high flame and add arbi slices

4-  Fry them at high flame until golden. When done, take then out in a plate (the stickiness of arbi is gone after frying)

5-  In the same oil add cumin/jeera and allow to crackle. Next, add masala curd and stir continuously to prevent the curd from splitting

6-  Add half cup of water and allow the one boil

7-  Add fried arbi slices and mix well with dahi

8-  Cover the pan with a lid and cook the dahi arbi sabzi for 4-5 minutes or until the arbi slices get soft

9-  Serve DAHI ARBI SABZI in the main course with roti or parantha
