
HUMMUS WITH ROASTED CAULIFLOWER AND CHIMICHURRI SAUCE

Roasted cauliflower is prepared with cauliflower steaks that are cut beautifully with 1-inch thickness and last but not the least chimichurri sauce that originally belongs to the Latin American countries like Argentina and Uruguay but now fondly eaten as a condiment around the Mediterranean and Middle Eastern world

As mentioned above, the first layer of Hummus is prepared by blending the boiled chickpea, olive oil, garlic, salt, and tahini paste. The very smooth Hummus contains the goodness of all these goodies very well
The second layer of roasted cauliflower has slightly charred yet sweet and nutty flavors, as fresh cauliflower is pan-roasted in the olive oil with a touch of salt, paprika, and pepper

● INGREDIENTS REQUIRED FOR HUMMUS
• Boiled Garbanzo beans /white chana/Chickpeas – 2 cups
• Tahini paste – 2 tbsp
• Garlic cloves – 1 big or 2 small-sized
• Olive oil – 3 tbsp
• Salt 1 tsp
● INGREDIENTS FOR ROASTED CAULIFLOWER
• Cauliflower head – 1 medium sized(cut into steaks)
• Oil for pan-frying – 3-4 tbsp
• Salt – 1/2 tsp
• Paprika powder – 1/4 tsp
● INGREDIENTS FOR CHIMICHURRI SAUCE
• Parsley – 1 medium bunch (chopped finely stems and the leaves)
• Olive oil – 1/2 cup
• Vinegar – 1 tbsp
• Garlic cloves – 1 no.
• Oregano – 1 tsp
• Salt – 1/2 tsp
• Crushed peppers – 1/4 tsp
● A FEW OTHER INGREDIENTS
• Chilli Oil – 3-4 tbsp
● PREPARATIONS TO BE DONE
1 – Boil the soaked white chana/chickpeas in a pressure cooker till it is perfectly cooked. It takes 20 minutes to cook it until it comes to a soft consistency
2 – Wash cauliflower well and cut into steaks of 1-inch thickness.

● HOW TO MAKE HUMMUS
1 – Add boiled chickpea, olive oil, garlic cloves, tahini paste, and salt to a food processor or wet blender and blend to a smooth paste to make hummus.
Transfer hummus to a serving dish and sprinkle some red paprika and drizzle olive oil

● HOW TO MAKE ROASTED CAULIFLOWER
1 – Firstly, rub olive oil, paprika, and salt on the cauliflower steaks. next, add oil to a non-stick pan. When oil is heated, place a cauliflower steak on it. Keep the flame at low-medium. Keep a weight (I put a stone mortar) on the cauliflower so that it is roasted nicely to get a golden brown colour in no time

2 – When one side is cooked, flip it to cook the other side. Again, put a heavy vessel on it for rapid cooking. Sprinkle some salt and pepper, and rub them nicely when it cooks. Remove it when the cauliflower steak is roasted nicely

● HOW TO MAKE CHIMICHURRI SAUCE
1- Heat olive oil in a pan and add finely chopped garlic, red chili slices, and chopped parsley stems. Give them a quick stir-fry and remove from the flame

2- Add all the above ingredients and parsley leaves, olive oil, and red paprika to a mixing bowl. Combine all the ingredients to make the chimichurri sauce

● TIME FOR PLATING …SERVE THE DISH IN LAYERS
1 – Add generous amount of hummus on a serving dish

2 – Drizzle some chili oil on hummus

3 – Place one or two cauliflower steaks on hummus

4 – Drizzle a good quantity of chimichurri sauce and chili oil on the cauliflower steaks. Also, sprinkle some paprika to get the smoky flavor
