INSTANT UTHAPAM /UTHAPAM WITH COCONUT AND MIX VEGGIES
Uthappam is a classic South Indian breakfast. This savoury pancake is a type of dosa which is cooked quite thicker with some toppings. These toppings might be only one veggie or mixed vegetables. These veggies are chopped finely and then spread on top of the uthappam while it is being cooked. With veggies, this becomes tasteful and very filling. Like other dosai, this also goes well with sambhar and chutneys
Along with assorted vegetables, I have added fresh coconut in this uthappam. Coconut adds the nutty flavour and I like this very much. I have added some grated coconut in the batter and some as the topping as well. Hope you too would try and love this version of uthappam. Whenever I don’t have the rice-lentil batter ready in hand, I prepare the instant uthappam with sooji/rava and oats. This batter does not require fermentation for hours yet makes fluffy uthappam with the use of soda bicarb or fruit salt(eno)

INGREDIENTS REQUIRED
• Curd – 1/2 cup
• Water – 1 cup or more as required
• Plain oats – 1 cup
• Sooji/Rava – 1 cup
• Salt – 1 tsp/to taste
• Soda bicarb – 1 tsp
• Cumin/jeera – 1 tsp
• Pepper powder – 1/2 tsp
• Grated ginger & 1 tsp
• Finely chopped onions – 1/2 cup
• Finely chopped – Carrot – 2 tbsp
• Finely chopped capsicum – 2 tbsp
• Freshly grated coconut – 1/4 cup+some thin shavings
• Coriander leaves – 2 tbsp
• Curry leaves – 1 spring
• Finely chopped red or green chillies – 2 tsp/to taste
• Cooking oil or ghee – as required
METHOD
1- Take a mixing bowl and add curd. Add water and whisk.
2- Next, add coriander leaves, curry leaves, cumin, red chillies and grated coconut. Mix well
3- Add oats and sooji. Mix well and keep at rest for 10-15 minutes so that flours absorb the liquid
4- Add grated ginger and baking soda. Add 1 tsp water and mix. The batter should neither too thick nor too runny. Whisk well so that soda mixes to the whole batter
5- Keep the dosa pan on flame. Sprinkle some oil and wipe with the kitchen towel
6- Drop a ladleful of uthappam batter in the centre of the pan. Allow the batter to spread itself. Uthappam is thick in texture Spread the chopped veggies and the coconut shavings on top. Press with a spatula so that those stick to the batter
7- Check at the bottom of uthappam if it has become brown, sprinkle some ghee or oil on top. Flip to cook this side now
8- Make the others uthappam like this. Serve the yummy uthappam with chutneys
