Not only this, this is one of the most popularly cooked desserts in the common households not only across the country but also the Indian subcontinent. This rice kheer is also served as the Prasaad (offerings) to God in many temples of India. Sharing the step by step procedure of this divine rice-milk kheer/pudding

Prep time – 20 min (soaking rice)
Cook time – 45-50 minutes (cooking at low flame)

INGREDIENTS REQUIRED
•  Full fat milk – 1 lt
•  Small grain rice/broken rice – 100 gms
•  Sugar – 200 gms/to taste
•  Saffron strands/Kesar – 8-10 nos
•  Finely chopped Assorted nuts (almonds, cashews, pistachio, raisin) – 2 tbsp

STEP BY STEP
1- Keep a heavy bottom pan, non-stick pan or a pressure pan on flame with 1 lt of full fat milk

2- Allow the first boil at high flame then reduce to low after that

3- Now, add soaked rice and saffron strands and allow the milk to simmer. Stir at intervals. Gradually the kheer will get the saffron colour and flavour

4- When the milk is reduced to 70% add sugar and stir continuously to dissolve. Mash the kheer a little with the ladle so that it gets the right consistency and texture (the rice and milk should not seem to be separate)

5- Add half of chopped nuts and mix well.. Switch off the flame now

6- Tasty Kesariya Rice Kheer is ready. Garnish this with remaining nuts on top and serve the yummy kheer hot or at room temperature
