LOUKI DOSA/BOTTLE GOURD DOSA/SORAKKAI DOSE
Bottle gourd dosa is a simple homely savoury pancake that is an integral part of the regular menu in South Indian households. These are enjoyed in the breakfast as well as the main course. As the name suggests, this dosa consists of bottle gourd or sorakkai/sorekai as called in Tamil. Bottle gourd is grated or pureed to add to the dosa batter along with some aromatics. All these add-ins make this dosa so flavoursome and tasteful.
These creps can be cooked instant as well as with the fermented batter. I am sharing this sorekai dosa recipe with the fermented one. For this dose, one has to start the preparations a day before. The preparations include the grinding of soaked rice and dals. This batter is then fermented for at least 6 to 8 hours or as per to the climate of your region

INGREDIENTS REQUIRED
• Dosa batter – 2 cups
• Grated louki/bottle gourd/sorekai – 1/2 cup
• Finely chopped onions – 1/4 cup
• Finely chopped coriander leaves – 2 tbsp
• Finely chopped curry leaves – 4 springs
• Finely chopped ginger – 1 tsp
• Finely chopped green chillies – 1 tap
• Crushed black pepper – 1/2 tsp
• Salt – 1 tsp
• Oil/ghee – 4 tsp
• Water – Sufficient enough to add the batter to make it of pouring consistency
STEP BY STEP
1- Add all the ingredients to the batter except oil
2- Mix well to combine. Add crushed black pepper and salt
3- Add sufficient water to the batter to get a pouring consistency
4- Heat tawa to medium temperature. Drop a little oil and wipe with an onion(this prevents dosa to stick on tawa)
5- Drop a ladleful or two in the centre and spread
6- When the surface becomes dry, spread some oil/ghee and flip to the other side. Cook the other side to golden
7- Serve the tasty sorekai dose with sambhar, green chutney and peanut chutney
