MUNG DAL RICE PULAO/A YUMMY RICE PULAO WITH MUNG DAL AND VEGGIES

INGREDIENTS  REQUIRED

• Short grain rice – 1 cup(200 gms)
• Split(yellow) mung dal – 1/2 cup(100 gms)
• Finely chopped onions  – 1 large
• Finely chopped ginger – 1tsp
• Finely chopped carrot – 1 large
• Medium cubed potatoes  – 1 large
• Finely chopped mushrooms – 1/2 cup
• Finely chopped green beans  – 1/4 cup
• Roughly chopped tomatoes – 1 large
• Fresh or frozen corn kernels  – 1 cup
• Ghee/oil – 2 tbsp
• Water – 3 cups (the same cup with the rice and dal are measured)
• Salt – to taste
• Red chilly powder- 1tsp
• Jeera(cumin) – 1tsp
• Bay leaf(tez patta) – 1-2 nos
• Black  cardamom (badi ilayachi) – 1 no
• Green  cardamom (choti ilayachi) – 2-3 nos
• Roasted cumin/jeera powder – 1tsp
• Turmeric (haldi)powder  – 1/2tsp

HOW TO MAKE RICE MUNG DAL PULAO

1- Firstly,  heat ghee in a cooker and add bay leaf, both cardamom, and jeera. Allow them to crackle. The whole spices will leave their aroma in oil(split cardamoms before adding to the oil)

2- Next,  add all the chopped vegetables one by one and roast for 5 minutes

3- Now, add chopped ginger chilly, salt, and all the powdered spices. Mix them with all the veggies

4- Next, add chopped  tomatoes and cook for a while

5- Next, add peas and corn kernels and mix well

6- Next, add soaked rice and mung dal.

7- Turn all the ingredients gently with a spatula and add water. Close the cooker with the lid. Allow 1 whistle to come and switch off the flame

8- Allow the steam to release and open the lid. Turn the pulao gently with a fork and serve hot with curd or pickle
